    Default Maple Syrup - Questions, Recipes, Comments

    We're off and running on the 2008 maple syrup season. My buddies and I started tapping trees today at our usual spot, and the sap is running. We expect to make our average 300 liters this year. We'll sell some to fund next years equipment purchases, and beer...we'll give some away, we'll give some money to the foodbank, and we'll stock our own pantries well.

    Do you like and use maple syrup? How do you use it? Got a favourite recipe?
    Any questions about the stuff? How it's made?

    I have a question. Is there ANY possible way you can be even more Canadian? I presume you have a mullet and drink a lot of Labatt. You should replace the maple leaf as the new country mascot. Jenny can be your female counterpart.

    Ohh..I used to go to the Maple Syrup festival every year back home in Pa.
    They had the BEST breakfast ever! You woke up at a god awful hour like 5 am to stand in line for 3 more hours to get in for breakfast of pancakes and sausage, with fresh from the tree maple syrup. sooo goood. Then walked around and did festival things like watch them tap trees, and they had crafts and stuff.

    I just gotta say though....the best way to use maple syrup is over vanilla ice cream.

    Even better Kaylinn...slip a toasted eggo waffle underneath that vanilla ice cream and syrup. And make sure there's lots of syrup in the bottom of the bowl too. Fuckin' ta die for.

    I don't have very much experience with maple syrup. I like what I've had, but I've spent most of my life in areas where maple syrup is exorbitantly expensive or not available at all. Now that I'm in Oregon I guess I should get some... Anyway, I'm not huge on sweets and I really don't like candy. That said, I LOVE that crystalllized maple candy you can occasionally find imported from Vermont (presumably you make your own in Canada, I've just never had it). That stuff is the bee's knees! I would do all kinds of perverted things for a supply of it.

    eta: whenever we have kids visiting the sugarshack, we do the hot syrup on the snow to make taffy thing. it's a crowdpleaser too.

    ^^^ I read about that in a Laura Ingalls Wilder book when I was a little girl and I've been dying to try it ever since. I think I would love it. If I came to Canada, would you accept a trade of crystallized maple candy for sex?

    Southern gals on food stamps don't have no Gunne Sax dresses! But I did spend hours playing Laura Ingalls on my grandmother's old butter churn. Maybe that's why I'm such an old-fashioned luddite to this day.

    I wish I could gather maple syrup and make sugar and candy out of it. Sounds like fun tramping around in the deep snow to get sweets. Then again, we had cornpone and fireflies so it's an even trade!

    Yeah baking them with syrup instead of brown sugar is a nice changeup. Works good with baked apples too.
    Lap...I sucked at curling, but the biggest part of that game is the drinking anyways. You'd have to really suck to suck at that. For good drinking games on ice, I prefer boot hockey or broomball. Those games only ever seem to happen when everyone's hammered.

    Well, technically, we actually gather the raw sap from the sugar maple trees. Tasted fresh out of the tree, it has a slightly sweet, slightly mapley flavour. It takes hours and hours of boiling (hence the beer) for it to condense enough to become syrup. Thirty five liters of sap will make one liter of syrup...a smaller amount of taffy, and an even smaller amount of maple sugar or butter.

    You probably already knew that Yek, but I just wanted to take the opportunity to explain it for those that don't

    And yeah...a few times today I was balls deep in snow. It's a good workout.

    Maple syrup is my vice (besides red wine). I think I buy some pretty good syrup from Trader Joes but I can't imagine it would be anything like fresh, practically straight out of the tree syrup.

    Just another reason to plan a trip to Canada. How long does the season run?

    Well the professionals have already started making it. For my buds and I, the season starts St. Patricks day every year. Thats when we break out the stuff and start tapping the trees. We'll be gathering sap and cooking until mid to late April...it varies according to the weather. In our area, we know the season has ended when we hear the frogs sing (in the marshes).

    In Ontario, and Quebec (and the northeastern states) there are all kinds of maple syrup festivals going on during the season. They are starting soon.
