Default Easy, healthy, YUMMY, almost-raw-food breakfast

I want to gloat about the breakfast recipe I figured out today! It's really easy and quick.

First off: I'm living in China with limited kinds of food available. I finally got sick of eating nasty processed food all the time and decided to do the diet plan I always do for temporary detox or setting my body back on a better path, which is half raw foods, 90% fruits/veggies/nuts with some dairy products. Even though it's hard to find normal food in China, the fresh fruits and vegetables here are FANTASTIC. So I'm eating mangos and dragonfruits and bananas and greens, though the greens are cooked, it's not always safe to eat rindless things raw here.

Anyway, the breakfast: two versions, the one I do here and the one I did back in the States when I did this thing.

    Home version--

Oat groats, soaked overnight (and ground in a food processor if you want) -- usually about three quarters cup I think?; one to one and a half bananas; a large handful of walnut pieces.

Mash together with a fork and eat.

    Easy version --

Two bananas, sliced thinly. One heaping tablespoon of peanut butter. About a teaspoon of unsweetened cocoa powder (the banana sweetens it just fine.)

It's like a nummy banana reese's cup and there's not a THING bad for you about it!

You could make it 100% raw if you wanted to do raw tahini or sunflower paste instead of peanut butter, too. Peanut butter is just the sole nut butter available to me here.

Whoa, what are you doing in China, you lucky girl?! They have fresh soy milk there, and I everybody drinks it warm from a bowl, like soup for breakfast. I really like that.

I've had the soymilk at the school cafeteria, and it is pretty nice. I'm not sure if it's fresh. It's too sugary for me, though. And unfortunately I've developed pretty bad stomach reactions to the local water, even boiled (not in other cities, only the one I'm at, so I'm guessing it's a pollution issue.)

The other reason I'm not eating local cuisine right now is that the awesome little street food places near the school were recently shut down. They may pop back up eventually, but in the meantime, it's the cafeteria or apartment cooking.

I'm teaching English. :-) One of the few nifty things I can do with my shiny useless degree. I miss my partners a LOT, though. I'm glad I came here, but I'm also glad I'm going home in about two and a half months.

When I was younger, I had some friends of the family that did that.. teach English over there. They really enjoyed doing it and went back several times a year. So, what part of the country?
Yep, warm fresh soy milk is the bomb!! Sugar is usually added later, I drink mine without. Has a very soybeany taste but I like it. There's places that do nothing but make fresh soy milk and bean curd and it is soo fresh, nothing like anything I can find at the supermarket here. They have one type of tofu here and that's it.

Yeah -- I do love being able to get so many awesome types of tofu. And being able to buy tofu and eggs as snacks on the street.

I haven't seen the plain fresh soymilk you're talking about. It may be a regional thing, or I may just not be recognizing it. I'm in a small city near to Nanjing, in a region known for sweet food and Huaiyang cuisine.

One thing I love here that I have no idea how to get in the States is this kind of greens, I have no idea what they're called, each leaf/stem is slender and serrated almost like herbs instead of greens and they taste AMAZING. A little oil, a little water, a garlic clove and just the *lightest* sprinkling of soy sauce and I have something really yummy almost instantly. They have this slightly sharp flavor... not tart, sort of like fennel or mustard seed? Very unique. I've had mustard greens before and they don't taste like these, but of course it could be a specific Chinese mustard green. I just discovered them when diet shopping, or rather, I'd had them before in restaurants and had no idea what they looked like uncooked, and stumbled upon these through happy accident.
