    So, I've been really into trying veggies I don't eat regularly and cooking them differently. I just roasted beets and turnips in rosemary and olive oil and they were delicious! Anyway, I just bought some parsnips and sunchokes. I'm not a huge fan of boiling, so does anyone know anything cool I can do with these veggies? Not necessarily recipies, just spices that would go well with either one and ways to cook them healthy. Oh, and if there are any other exotic veggies you think I should try, let me know. I have yet to find a veggie/fruit I didn't love. And it beats eating salads every day!

    sunchokes you can treat just like potatoes. parsnips can be roasted with other vegetables if you don't want to use them for a soup. parsnips go well with yams, roasted with some type of meat or light oil.

    Parsnips are glorious. Use them any way you would use carrots. My favorite is a thing my mom does, she takes carrots and parsnips and roasts them together until they get that slightly blackened caramalization. While they roast, she pours balsamic vinegar into a small pan and reduces it until it's thick like honey, and then she drizzles it over the roasted carrots and parsnips. The simmering vinegar stinks but it's so delicious, it's totally worth it!

    I've never heard of sunchokes before. They sound good! I'll keep an eye out for them!

    they're also called Jerusalem artichokes. they used to be super cheap and known as 'the poor man's potato'.

    Sunchokes are the bomb diggity! I Slice them in half, drizzle with oil, and sprinkle with sea salt. Bake till golden brown (around the edges) and fork tender.

    ok this doesn't answer your original question but I just recently read to not throw away the beet greens because they can be cooked like collard greens. I'm just tossing that out there because I'm random like that.

    Okay, I've heard of Jerusalem artichokes but never had them. I'm going to have to hunt this down because they sound delicious. I just read all about them on the internet and I bet they have them at my produce stand!

    Parsnips sometimes need to be cored, because the inner core will be woody and stringy. I cut them in half, core them, and roast them in a hot oven with whole cloves of garlic, olive oil and salt, them mash them all together. I have heard they're good to eat to boost your immune system.

    @LSM -- beet greens are really high in iron, like spinach, and are delicate and delicious. A lot of salad mixes have baby beet greens in them.

    Beet greens are really good! They taste a lot like chard. I wouldn't cook them like collard greens because they're not that tough... just use them like you'd use kale or chard. I stir-fried them until they were mostly cooked, then poured in just a little bit of broth and let it steam out. When the broth was gone, the greens were done. I think I cooked them with onions.

    mmmmm that sounds really good. I've never tried fresh beets (I love them canned though) but will have to check that out now.

    I hate them canned, but I do like fresh beets and beet greens. In Australia they would put shredded raw beets on hamburgers and it was so delicious. I had a spinach salad with feta and fresh beets this morning, actually.

    shredded raw beets sounds refreshing. I never would have thought of that. Since I stopped eating meat yesterday ( ) I'm trying to expand my horizons.

    OMG. The sunchokes were SO GOOD! And they taste like artichokes, even though they're not. Oh, and thanks Yek for the parsnip/carrot idea with balsamic. Totally yummy! And I feel super healthy now because my day already included a bunch of new veggies. I'm roasting artichokes for dinner next with a tomato/basil/mozzarella salad.
