    Default An Egg Question

    I'm making deviled eggs for an event on Saturday. The thing is, I know that I can't make them the night before. If I remember correctly, they don't exactly last well in the fridge overnight since the yellow stuff gets kind of discolored and gross-looking. I'm okay with mixing up the filling the morning of, but I'm wondering if I could peel the eggs the night before. If you have a bowl of peeled, hard-boiled eggs sitting in the fridge overnight, would the outsides change at all? What if I peeled them and then kept them in a bowl of water in the fridge overnight?

    I think peeled eggs would be okay overnight in the fridge. I've seen people do that with just plain hard boiled eggs for kids lunches.

    Peeled or unpeeled..hard boiled eggs last fine overnight(actually...I've kept them in the fridge for a week or so) without discoloring.

    When I do devilled eggs, I peel and cut the eggs and leave them in the fridge overnight. That also helps make it a LOT easier to fill them as they tend to be a bit more firm the next morning (just DON'T put them in a Ziploc--use a devilled egg tray that's covered but not airtight). Then I make the devilled egg filling and go ahead and put that in a Ziploc and refrigerate. The next morning I cut a hole in the corner of the bag and insert a pastry tip (star tip) in it. It makes the filling come out in a really pretty star shape and looks really fancy.

    Try making the filling the night before, but leaving it in a bowl, covered tightly in the fridge. Also, cover your egg whites so they don't get dry. The next morning all you have to do is spoon the filling in. It's what I do on holiday's when I know I'm gonna be hella busy in the morning.

    Sorry for the repeated info. It was posted while I was writing this. One good thing about mixing the filling early is that the flavors have more time to blend, which makes it even yummier.

    AAhhhh! I'm tweaking out on diet pills so I shredded most of my eggs when I tried to peel them! Now I have to boil some more. I hate peeling eggs.

    Sorry if I made anyone... Cam... crave deviled eggs... The event is my pie contest/ party/ *cough* I'm not a nerd *cough* so... I won't mention anything about the pie I made. Oh, and for anyone who may also have the same egg-boiling issues that I seem to, I really like this site that I found: http://www.howtohardboilanegg.com/ I found a lot of info there that my mom didn't even know.

    Yeah...eggs are cooling in my fridge as we speak..waiting to be deviled! I have peeling issues too...I always seem to take a chunk of white out of a few along with the shell....oh well..still tastes good!

    You can just roll the egg on a hard surface when it still has the shell after that it should be really easy to come off.

    ^That doesn't always work for me. The tip about soaking them in water after cracking them helped a lot.

    My recipe:
    6 hard boiled eggs, peeled
    1/4 c. mayo
    1/2 tsp ground mustard
    1/2 tsp parsley flakes
    1/4 seasoned salt
    paprika

    Slice eggs in half length-wise. Remove yolks; place in small bowl. Mash with fork.
    Stir in mayo, parsley, mustard, and seasoned salt until smooth and creamy (I use an electric mixer).

    Spoon yolk into a plastic bag, cut off the tip of the bag, and squeeze into egg halves. Sprinkle with paprika.

    Probably not the most elaborate recipe, but everyone has always liked it. I always double it up since people eat them all.

    I roll them, I run them under water, I soak them...still lose a chunk of white.Some eggs just do not want to be peeled...

    If you throw the eggs in an ice bath, the white shrinks a tiny tiny bit and therefore separates from the shell... so they peel easiest.

    I just made my batch with 12 eggs... NONE of them were missing a chunk and they were really easy to peel. Maybe it's because I boiled them, immediately put them in ice water to cool, and then peeled them as soon as they were cool to touch. The shells came off like... well... eggshell. Slimy eggshell. They all peeled right off.

    You might not be leaving them in there long enough OR your eggs might have been frozen at one point. It kills the some of the membrane between the albumen and shell making it easier for cooked egg to adhere to the shell.

    i just got done eating mine with the boy mine have onions, mayo, mustard, sour cream, pickled relish, salt, pepper and paprika. Yumm!
