    I was reading on CNN - Health that you can substitute oil for apple sauce.

    This recipe only has 2 ingredients and it makes chocolate brownie muffins that are sooooo good + has reduced fat and calories. It's just boxed chocolate cake mix + a can of pumpkin. So easy!

    Applesauce instead of oil works great, I've been doing that for years! If you don't have applesauce but you have apples, you can make your own. Peel and chop one or two apples, put them in a saucepan with about 2-3 tablespoons of liquid (water, juice, cider, whatever) and simmer on medium until the apples are soft. Take it off the heat and mash it up with a fork. Voila, applesauce.

    Bananas can replace eggs too, while we're on the subject. Just mash them up thoroughly and one small ripe banana is worth one egg.

    Oh I really like this banana idea. When I eventually get around to cooking I'll have to remember it.
    Some mistakes are too much fun to only make once.

    I hate egg yolks. I don't mind the whites but the yolks taste exactly like a fart smells.

    You can also substitute flax meal for eggs - 1 tablespoon per egg, stirred into a bit of water. AND, my favorite, silken tofu. 2 oz per egg. Just blend it first.

    This reminds me of a cake I had from Chilis years ago that was made out of beets. It was the most ridiculously, rich and decadent chocolate cake I've ever had from a restaurant. You couldn't taste the beets at all which was good because those things are usually nasty. I'm not sure how I was convinced to order it. I think the waitress suggested it but didn't tell me the secret ingredient until after I'd eaten it. I'd love to track down that recipe someday.
