    Default I want to go vegetarian...

    For the last few weeks or so I've been considering going veg. I've decided that I'm going to do a little research this week, look for some recipes and if I need any supplements that I won't be getting in my veg. diet. I'm sure there are tons of threads, and I"m going to look. But if anyone has any more personal advice I'd love to hear it.
    I decided this because I've been feeling like I need to get back to nature more. I feel very out of sync with my body and surroundings. I have this drive to be more healthful, meaningful and one-minded in my choices. I just feel all out of whack. This isn't the only thing I'm doing to get there, but it's one step. It'll be hard potentially b/c I don't think E wants to do it (he did it for 7 years, then vegan for 1 1/2) though, so there will be all these seperate meals and stuff. I'm willing to try it though. So by next Monday I hope to be ready to be a veggie-girl.

    The fake bologna is much better than the fake roast beef lunch meat.

    LOL..thanks...I didn't even know there was fake roast beef lunch meat. I need to read a little more.

    Also,if there's any cookbooks you recommend purchasing. I really like making/cooking thing from scratch.

    I don't have any cookbooks specific to veggie recipes, I just tweak my existing ones and add meat subsitute. Check where your grocer sells tofu, that's where they typically have the meat substitute products such as: fake ground beef, fake chicken strips, fake lunch meat, vegan cheese, etc. Personally I've found that I don't care for the fake chicken strips. They're just ok, I'd rather do without though. The roast beef slices suck like I mentioned above but the bologna is pretty good, close to the real thing. I haven't cooked up the fake ground beef yet so can't comment on it.

    Basically I've been eating alot of vegetables. I've fallen in love with beets. They are so buttery and delicious. I will 'fess up though that I have cheated several times since I started this way of living 4+ weeks ago. Yes, I have eaten real chicken and a small portion of steak, I just couldn't help myself and it was right in my face. At least I didn't gorge though and got right back on the program. Last time though it wasn't as good as I was anticipating making it easier to abstain.

    I tend to do alot of my shopping in the organic aisle. I don't know what you plan on doing about your dairy but I now use almond "milk" for my cereal and it is soooooo good! I think soy milk sucks and will not even attempt to become acustomed to the taste but almond milk is the bomb. You can make it at home but it's just easier for me to buy it even if it does have cane sugar in it.

    I think the best thing to do is to just buy a few things to test them out and discover what you like and don't like. Another thing I've discovered I don't really like is tempeh. Maybe it was the flavor I bought, I"ll probably try a different variety soon. Anyhow, just buy a few things to try and see how it goes from there rather than investing a small fortune in completely restocking your kitchen, at least for now.

    There are a lot of veggie friendly things I already like..like tempeh. I've used TVP before. I love fresh fruits and vegetables so that won't be the hard part. I actually like soy milk, but I'm not going vegan so reg. milk would be OK. However, I'm finding myself to be getting lactose intolerent so no milk anyways. I do like Rice Dream though too. I'll probably be going that route. E has some vegetarian books still so I"m going to take a look at those.
    There is one recipe I really like that he made once. It was orzo and cheese stuffed peppers. He likes olives and uses them in his, but I don't! I'd have to find a way to have some protein there.
    I'm actually really excited about this change. I think it's really going to help a lot of things in my life.

    maybe stuff some cooked quinoa in the peppers with the orzo. Quinoa is high in protein.

    Oh yeah! I went to get quinoa the other day at whole foods and they were out. No other place around carries it. I wonder if MOMS carries it. There is one on the way to work.

    've been a vegetarian for about 17 years. I like just taking random veggies and tofu and throwing them in a salad. I like adding nuts and dried fruit too for protein and iron. You can also go with Morningstar Farms Veggie "meat" like bacon, sausage, chicken nuggets, veggie brugers, etc. Burritos are nice to make too, with red peppers, black beans, yellow squash, and carrots.

    Spaghetti squash is yummy after being in the over, and adding some garlic and butter.

    There is always vegan cheese if you want to stay away from dairy. I like Silk chocolate soymilk, and vanilla too. (Don't get the plain, it's bland. Yuck.)

    Get those flavored almonds and peanuts. They are tasty and great sources of protein. I like the wasabi/soy and jalepeno smokehouse ones.
    I also love those Bolthouse Farms smoothie/juice things in the produce section. The vanilla soy has a ton of protein in it, and the blue one has lots of B vitamins. Both are really important things to make sure you get enough of.

    I'm going to pretty much make everything I think. With easy/handy stuff in emergency. I will be using reg. cheese for now though. I went to Veg123 and really like the info I've read soo far.
    Luckily I LOVE veggies. There really isn't a veggie I won't eat
    (OK there are a few). When I was little I was sooo picky..when I hit teens I started eating things i didn't like just to get over it. It's funny how you can adapt to things and start to like them.

    I love Boca Burgers (All American Flame Grilled) and Morningstar Farms burgers (Grillers Prime)- I will have one for dinner w/cheese, lettuce, tomato, pickles and BBQ sauce on a bun, but they're just as good w/out the bun. Really quick and easy and yummy!!!

    I also eat a lot of almonds, dried fruits, yogurt (I'm not vegan)
