    I am totally obsessed with baking. Cakes in specific, but I freak out over brownies, cupcakes, pastries, and all kinds of desserts. I am the kind of person that watch the Food Network ALL DAY long instead of General Hospital or TRL (have done this since MIDDLE SCHOOL).

    Me and my boyfriend both love food, but he's more on the actual meal side than the dessert.

    I have been thinking lately that I'd really like to go to pastry school and bake cakes for a living. Pastry school is like, 26-36K though, which is way crazy and totally out of the question. My boyfriend and I can't get any private loans b/c our credit is not so great.

    I dont want to be a downer and be like "Wah, money is in the way of my dreams" but it kinda is. Is there any way around this? Or do you just have to sometimes realize that things just won't work out?

    First of all, there will always be obstacles on the way to achieving your dream. But those obstacles are there to separate those who really want something vs. someone who really doesn't.

    I think that failure is not defeat. It's just a delay.

    If you really want something, you'll find a way to make it happen. Sometimes you have to put your energy into something...then things seem to take off on their own. I also think that if you treat life with love and respect, then life will love and respect you back and the way to your dreams will have a way of manifesting itself.

    You have to be positive and believe that if this is meant to be then you WILL find a way somehow. If you believe in yourself, and believe it is possible, you will figure out a way.

    I have learned this firsthand, as I am pursuing a career in movies/entertainment and am nearly there...

    It's an investment in your future. An investment in you. Years from now when you are a succesfull pastry artist with your own pastry shop, you will always be grateful to him for making it possible and for mentoring you in business. What succesfull guy could say no to that?

    Plus, he could make payments as you went, right?

    I guess it depends on how you want to go about this dream.

    I attended a pastry school similar to the one you mentioned, though i don't htink mine was that expensive.

    You have to be REALLY physically fit. I dropped out because the pace and the schedule caused SO many health problems for me----I'd worked in the industry for YEARS and never had a problem! Your courses tend to be several hours in a row at an inconvenient time(either really early, or really late, because they assume students already have culinary positions that need them in the middle of hte day. IF your a breadbaker in the AM, you take a LATE class. If you're a bartender in the afternoon and PM, you take an early class(like 6-7 AM) THey rag on you about every aspect of your self presentation, and uniform, and give you usually several complex recipes during class time, where if you make a single mistake, or are not as streamlined, you have to come in during open labs to bake it again.


    It is GRUELING.

    Funny thing? Most of the higher professional bakers i worked for, had never attended school. it is not a necesary thing, though it helps for learnign about complex dishes, proper sanitation(I still have the valid food handlers card from my tenure), and some of the science behind the recipes. IE how to build a cookie recipe from scratch based on the texture you want, and hte amount of fat, sugar, gluten developement, etc.

    I'm sure they have payment plans, or if you DID have a sugar daddy who could put little bits towards it at a time, or use your alllowance towards it, maybe that would help.

    But i did want to warn you on how grueling the schedule and hte pace is. I loved baking, and after months of it, i was sick, depressed, and dreaded the sight of a metal cooking implement.

    I was about to say that.... You can get training in restaurants without actually going to the school. I'm no expert, but I look at it like those modeling schools. You can get your contacts and skills without actually going to school for it.

    I worked in the back of the house too before I switched to FOH. I specifically did pastry and I learned a lot from it.

    Have you ever worked in a restaurant before, though? I don't mean to sound condescending because I had only baked at home previously either -- but cooking in a restaurant is a LOT different than doing it recreationally. It can be more fun too, but it's way more high stress and it can begin to seem routine. I quit for three reasons:

    a) The pastry chef I worked for was one of the top in the city, and only made about $60K.

    b) At the time (immediately) I was only making $11/hr, which was fine for the experience I was getting, but I couldn't live on it

    c) I couldn't face a life covered in the gruesome burns and cuts I was acquiring. It ain't true that good cooks don't hurt themselves. Even now, I get recognized by other professional bakers because of the telltale diagonal burn marks on my forearms from sheet pans.

    I know it seems romantic to be a pastry chef, and sometimes it is, but sometimes it really sucks. You are not paid highly, you work really long hours, and you're in a kitchen environment - surrounded by sweaty cooks swearing, staring at your boobs, slapping your ass, etc. It has to be a labor of love. There's all kinds of differences, though. I don't know whether you want to be a pastry chef in a nice restaurant or open your own bakery or what.

    The pastry chef I worked for, just FYI, had gone to a 9-month "pastry certification course" that taught him all the basic techniques. I'm not sure you need more than this unless you aim to be highly competitive in fine dining. To start, you don't need anything but willingness and a phone to answer an ad for a pastry assistant! It's very possible to work your way up without formal education.

    I can reply more later if you have questions. I decided it wasn't for me because I didn't want to invest money, education, and time into something that wasn't financially rewarding enough, but I seriously considered it for a long time... I loved cooking!
