Coastline is a school in California where you can take all of your lower division requirements online and pay cheaper tuition.

There are several real public universities that you could then transfer to and complete coursework online. I looked into the Dietetics program at Kansas State at one point
http://www.dce.ksu.edu/courses/degrees/bachelors.shtml. Becoming a registered dietitian might be a start for planning their diets. For planning workouts I would think you'd want a kineseology degree and I don't know of any online.
There are quite a few schools that offer just one or two online majors. I think Oregon State offers some. Theres more I just can't think of them off the top of my head.
I did my first two years of school online and then transfered to a highly ranked university.
