Not to threadjack, but are you trying to lose weight, hence the low carb? I think you can eat carbs and still lose weight, just preferably make them complex carbs, like beans and brown rice with vegetables, etc. I haven't read the "Skinny Bitch" veg diet books, but that might be helpful.

Brodielux..I have a great vegan cookbook. Once my life is back in order I'll try to get some recipes to you. You really should be eating complex carbs though, especially on a vegan diet.
It's not a weightloss thing. I eat fruit, soy yogurt, sometimes wheat-free hot cereal. I don't like pasta and while I like rice, it's not very nutritious. I feel best when I eat very little carbs.
This will show how ignorant I am, but how does one marinate tempeh? And in what kind of sauce? Do you just stick the tempeh or tofu in a dish full fo soy sauce in the fridge overnight?

This sounds very limiting and I don't know how you can stay on such a diet for very long. For me, veganism is easy because of my ehtical issues, but there is no ethics that will hold me back from french fries and pasta! Eventually, I will cave
btw, brown rice is definitely nutritious!
