    Default I Stupidly Offered to Cook My Date Dinner - HELP!

    I'm kicking myself right now for thinking I was a domestic goddess. I was being frugal and suggested I cook dinner for us tomorrow night instead of going out to eat. I cook for myself most nights but its pretty simple average pasta, pan-fried fish, or veggies. I'm great with making deserts but clueless as far as real food goes.

    Its too late to back out now. What do I cook? I'm thinking I'll make ahead whatever I can today, perhaps a pie or something for desert. I might go buy some place mats or napkins at Target in a bit to jazz up my crappy apartment. I've been meaning to get cloth napkins for a while anyways.

    Any good recipes? Suggestions for timing this all? Do I go get premade stuff from the grocer and dump it in pots and pans so it looks like I did it?

    oh dear. i cannot cook at all so thats what i would do, but then what if he likes it and you have to do it again!?

    Asparagus with Lemon Vinaigrette

    1/4 cup extra-virgin olive oil (can use hazelnut or walnut oil)
    2 tablespoons freshly squeezed lemon juice
    3/4 teaspoon fresh thyme leaves, chopped
    1 clove garlic, minced
    3/4 teaspoon coarse salt
    Pinch freshly cracked black peppercorns
    2 pounds asparagus stalks, washed and trimmed

    In a jar or bowl, combine olive oil, lemon juice, thyme, garlic, salt, and pepper. Store, covered, in the refrigerator. Serve at room temperature.

    Blanch the asparagus in lightly salted boiling water for about 3 minutes or until crisp-tender; do not overcook. Remove from heat and refresh under cold water; drain well. Toss asparagus with enough lemon vinaigrette to lightly coat. Arrange asparagus on serving platter or individual serving plates.

    Cajun roasted potatoes with green peppers.

    Cook Time: 35 minutes
    Ingredients:

    * 2 pounds cut up potatoes
    * 1 tablespoon olive oil
    * 1 1/4 teaspoons salt
    * 1/2 cup chopped green bell pepper
    * 3/4 teaspoon paprika
    * 1/2 teaspoon finely minced garlic
    * 1/8 to 1/4 teaspoon ground cayenne pepper
    * 1/4 teaspoon thyme

    Preparation:
    Combine potatoes and olive oil in a 13x9x2-inch baking pan. Sprinkle with seasonings and toss to coat well. Roast at 450° for about 35 minutes, stirring 2 to 3 times.
    Serves 4.

    Salmon with ginger glaze

    # ¼ c packed brown sugar
    # 2 Tbsp Dijon mustard
    # 1 Tbsp grated fresh or 1 tsp ground ginger

    # 4 6-oz wild Pacific salmon fillets, about 1" thick, skinned
    # ½ tsp salt
    # ½ tsp freshly ground black pepper

    1. Coat rack of broiler pan with cooking spray. Preheat broiler.
    2. In small bowl, whisk sugar, mustard, and ginger. Season both sides of fillets with salt and pepper. Place salmon on broiler rack and brush glaze on top. Broil (6" from heat) 8 to 10 minutes or until fish is lightly browned and opaque.

    ^^^ Awesome idea. Asparagus would make a great side dish and that looks simple enough. I've seen my grandma blanch stuff before for Thanksgiving so I have a general idea of how it works.

    He's been putting so much effort into our dates that I can't just throw up my hands and order pizza. Otherwise, I'd usually I'd say guys don't deserve this much work after only a month.

    ETA: Salmon or some fish was what I was thinking too. I <3 fish. You are on fire today HHL.

    I would get stuff pre-made from the grocery store and just fess up that you're a "one bowl" cook so you cheated. That or pasta, bread and salad. What's he going to do? "You didn't make this pie crust yourself? What kind of woman are you?" and storm out? Like, don't worry - he'll eat it anyway.

    A really good and very easy meal to make is pork tenderloin. Buy some Lipton Beefy Onion soup to add flavor to it. Sprinkle one of the dried soup packets over the tenderloin and add a cup of water to the pan. Cover it with tin foil and cook it for an hour and a half. Garlic mashed potatoes and corn make good sides. I cook this all the time and it's absolutely delicious!

    Classic Coeur a la Creme with Raspberry Coulis and Fresh Raspberries



    4 ounces cream cheese, softened
    1/3 cup plain yogurt
    4 teaspoons granulated sugar
    1 teaspoon very finely grated lemon zest
    1/4 teaspoon lemon juice
    1/4 teaspoon vanilla extract
    Pinch salt
    Raspberry Coulis, for serving, recipe follows
    6 fresh raspberries, for garnish
    Fresh mint leaves, for garnish

    In a medium bowl, combine all of the ingredients and beat together with a whisk until smooth. Strain the mixture through a fine sieve. Line a 6-ounce, shallow heart-shaped ceramic ramekin or 6-ounce shallow oval ramekin with dampened cheesecloth. Pour the cream cheese mixture into the ramekin and fold the over-hanging cheesecloth over the top. Refrigerate the mold in a shallow dish to catch any drips for at least 4 hours, and up to 2 days.

    To serve the dessert, unmold the coeur and carefully peel away the cheesecloth. Place the coeur on the center of a dessert plate, smooth side down. Allow to sit at room temperature for about 20 minutes before serving. Drizzle the raspberry coulis around the plate and garnish with the fresh raspberries and mint.

    Raspberry Coulis:

    2 cups raspberries (about 12 ounces), rinsed
    3/4 cup Simple Syrup, recipe follows
    1 1/2 tablespoons fresh lemon juice
    1/2 tablespoon cornstarch

    Bring the raspberries, syrup, and lemon juice to a simmer in a heavy medium saucepan over low heat. Simmer, stirring occasionally, until the berries are very soft, about 8 minutes.

    Sprinkle the cornstarch over 2 teaspoons cold water and stir to dissolve. Pour into the simmering raspberry mixture. Cook, stirring occasionally, until the sauce thickens, about 3 minutes.

    Strain through a fine-mesh sieve into a bowl; discard the seeds. Cool completely, then cover and refrigerate until ready to use. Freeze any leftover coulis in a plastic container for up to 1 month.

    Yield: 2 cups

    Simple Syrup:

    1/2 cup sugar
    1/2 cup water

    Combine the sugar and water in a small saucepan and bring to a boil over high heat. Reduce the heat to medium-low and simmer, stirring occasionally, until the sugar dissolves, about 3 minutes. Pour the syrup into a container and refrigerate until completely cold, about 45 minutes. The syrup can be stored in an air-tight container in the refrigerator for up to 1 week.

    Yield: about 3/4 cup syrup

    I think I'm going to end up going to Whole Foods and checking out their premade stuff. My idea of cooking is cutting up some veggies, cooking some pasta and dumping premade sauce on it.

    I hate admitting to worrying about stupid stuff like this....its just a guy afterall. I swore I'd never cook one dinner. I fail.

    I would so cook for you, I would cook for me al of this if I had the time! lol With the kids I don;t get to do all that but for a date I would so do this. The potatoes and asparagus and salmon are easy.


    If the salmon is too hard, in that recipe I would just add butter, oregano, salt, lemon, parsley and garlic in a frying pan and flip, flip and tada.

    I can grill some fish, maybe with that ginger glaze, and make a homemade desert. I'll probably buy the side dishes though.

    Desert is easy though. I'm a pro with baking fattening goods.

    Or I can get him drunk and fuck his brains out so he doesn't remember the food I don't want him to think I put too much effort into all this though.

    One of these days I'll learn to cook though!

    You should really try my tenderloin recipe, I'm telling you! I don't really cook at all, and even I can make this with no problems (which is saying a lot, lol). It's so easy to make. I even use powdered garlic mashed potatoes and frozen corn!

    The asparagus sounds easy enough too. I don't know how I could screw that up.

    Virgo that pork recipe sounds awesome but for some reason pork gives me the heebie jeebies. My mom cooked something similar almost every night when I lived with her. It sounds like my kind of cookin though. She used some Lipton mix with it. Garlic mashed 'taters sound like an easy enough and yummy side dish for fish and asparagus though. I've always just put butter and salt in them. I might have to try garlic too.

    I just keep reminding myself that he's going to eat and love whatever I make anyways....and if it sucks I'll never have to cook dinner again. Maybe I should do a shitty job to ensure he always takes me out.

    Just cook it all separately then layer it on the plate.

    When cooking for a woman, if she like sea food I make New Orleans Style Shrimp

    2 tablespoons butter
    2 garlic cloves
    1 teaspoon dried rosemary
    1/4 teaspoon cayenne pepper
    3/4 cup dry white wine
    2 tablespoons Worcestershire sauce
    3/4 pound uncooked large shrimp, peeled, devined.
    French Bread

    Melt the butter in heavy medium skillet over high heat. Add garlic, rosemary, and cayenne; stir 30 seconds. Add wine and Worcestershire sauce; boil until liquid is reduced by half, about 5 minutes. Add shrimp to sauce. Simmer until shrimp are opaque in center, about 3 minutes. Serve with bread.

    It serves two

    I would say Mac & Cheese but since you obviously want to impress him - Id add peas and franks...


    Fyi and easy easy way to do asparagus and any veg:

    put Asparagus on cookie sheet
    Drizzle with Olive Oil
    Bake for 10 min or until just tender

    I cover with parmesan cheese in a oven-safe serving dish and cook another min or so to soften or melt the cheese
    - very tasty

    With that I'd have a nice steak and good bread ( a nice crusty baguette!) ... A very quick dinner. Cook the asparagus 2 minutes vefore taking the steak off heat. While steak is resting finish asparagus.

    Thats kind of a guy dinner - it would be more manly with roasted potatoes....

    It's probably already too late, but man, check out the Food Network website. Some of their chefs are like magicians. Sandra Lee does 'Semi Homemade' where I think she says 70% is store bought, 30% fresh ingredients and personal touches or something like that. Rachael Ray makes 30 minute meals. She has tons of recipes that look like you took forever and it took half an hour! Very impressive!

    Sounds like you can pull this one off, even if you don't go all out on a gourmet
    dinner, the dessert is going to captivate him!
    Trust me guys that dig sweets will LOVE that you baked.
