Cabbage roll casserole! Cook some ground beef, turkey, chicken, or TVP in a skillet with onion and garlic. Drain it and mix it with chopped cabbage, a can or jar of spaghetti sauce, about a half-cup of brown rice, and a chopped carrot if you want. Pour all that into a baking dish, pour about a cup of broth over it, and bake it at 350 F for about 45 minutes.
I like to cut it up and fry it in some butter. You could fry onions with it too, and then I put it over some pasta.
I'm kind of a weird eater though so I don't know if that sounds good to anybody else lol

Sweet and sour cabbage! I gave Lena this recipe-she can vouch for it.
Slow cooker-combine tomato juice, lemon juice to taste, pepper, and cabbage. later on,add rice, and (optional, i don't since i'm vegetarian, but my mom did and its HER recipe) browned hamburger meat.
Cook till cabbage is tender, and rice is cooked. Its not very finicky-very hard to mess up. Makes a thick stew! Now i want cabbage to make it myself-haven't made it in forever.

Boil the cabbage so the leaves become nice and soft, then carefully peel them from the cabbage itself. Make your own mixtures of meats or ground up veggies (spiced how like it) and then make little patties and wrap the cabbage leaves around them and pin them closed with toothpicks. Then cook the cabbage wraps in a tomato soup or tomato bisque.
The recipe I use is: Mix ground bison or chopped ham with cooked rice, salt, black pepper and jalapeños (or similar hot peppers) into a thick paste. You may add an egg if it's too thick. Take the biggest leaves from a cabbage making sure not to break or tear them; dip them in boiling water to soften them, then wrap each leaf around some of the filling mixture into a sealed roll. Secure by sewing or simply stick a toothpick through, and simmer for about an hour in tomato soup.

My mom used to make these amazing little things called cabbage burgers. It was basically dough pockets with hamburger and cabbage and some other stuff inside. I have the recipe in our family cook book. I'll post it later. Oohh I just realized I should try making this with those soy crumble things. Yay fake meat.

Cabbage is great in salads.
My favourite salad of all time has shredded cabbage, cucumber, red onion and lots and lots of chopped coriander leaves (I believe people call them cilantro in the States?).
Dressing is made with lime juice, olive oil, garlic and a little black pepper.
It's super awesome if you make it a day in advance.
Be warned, though, it is quite pungent. My husband calls it "stinky salad".

Alright here ya go! You could probably make these with premade dough or something but you said you like to make bread anyway Yek. The best part of these to me is the homemade dough.
Mom's cabbage burgers
Ingredients:
2 c. buttermilk
1/4 c. sugar
1/4 c. butter
2 tsp. salt
1/2 tsp baking soda
1 pkg. yeast
3 T. warm water
5 c. flour
1 sm head cabbage
1-2 grated carrots
1 onion, chopped
1 1/2 lbs. hamburger
For dough:
Heat buttermilk; add sugar, salt and baking soda. Cool. Soften yeast with sugar and water. Add to milk mixture. Mix in the flour. Let rise.
For cabbage and hamburger mixture:
Grate cabbage, carrots, and onion. Brown hamburger, drain off fat. Add to cabbage mixture and cook together. Cool.
Burgers:
Tear off handful of dough. Put 1/2 cup of cabbage mixture in. Pinch closed. Let rise again. Brush tops with butter.
Bake 20 minutes at 350 degrees.

Oh, and murdock, that salad sounds great - like a vinegar slaw with no mayo and cucumbers added. I LOVE vinegar slaw. I'll have to try that sometime too!

My family calls these Gluschke's and we have a tradition to make them every new year's day. I have no idea how I didn't think of these before, but they're Romanian and absolutely the best thing ever!
Cabbage rolls * Sarmale
1 large soured cabbage or one large cabbage and sour kraut*, 1 3/4 lb/750 g ground meat (mixture of pork and beef is recommended), 4 large onions, 2 tablespoons rice, 3 tablespoons lard, 5-6 tomatoes or 1 tablespoon tomato sauce, salt, pepper, 1 qt/1 l sour cream
Grind the meat with a raw onion. Place in a bowl and mix with rice, pepper, salt and finely chopped onion slightly fried in two tablespoons of lard. Mix everything well. Core the cabbage with a sharp thin knife. Carefully remove the cabbage leaves, one by one, so that they do not tear. Cut larger leaves in 2 or 3 and then place a little meat in
each cabbage piece and roll in. The smaller the rolls are, the tastier they are. Place a layer of rolls in the pan (take a deep one), then cover with a layer of chopped (julienned) cabbage, then a layer of thinly sliced tomatoes. Do this layering until all the rolls are made. The last layer must be tomato slices or add tomato sauce. Add a heaping tablespoon of lard, pour the borsh and let simmer on top of the range for 30 minutes. Then place in the oven so that the liquid is reduced. Serve with sour cream.
* When soured cabbage is not available, use cabbage leaves scalded in water and sour kraut in stead of chopped (julienned) cabbage.

LILYLOVE!! OMG!! I just made your recipe. It's fucking AWESOME! I used half whole wheat flour and half white, ground turkey instead of hamburger, unsweetened almond milk with a little vinegar instead of buttermilk, and olive oil instead of butter. I also added some garlic to the filling. Next time I think I'll put a little sriracha in the filling too, just to make it a bit spicier.
Dude. It was AWESOME, and these little rolls are so portable. These are perfect to take to work, or hiking, or whatever. I'm going to be making these a lot from now on. Thank you!

I was just thinking tofu. You don't have to buy the crumbles, just get a block of tofu and freeze it, and then thaw it out (which will take all day on the counter) and squeeze the liquid out. Cheaper than the crumbles and probably better for you, if the crumbles have the extra stuff. I want to try this with tofu as well, and I probably will for the next batch! Thanks again for that recipe!
