    Default Quick Cooking Question!

Can your replace heavy cream with milk in a recipe? I was just about to whip up some chicken penne alfredo (no fetuccine in my pantry!), and I realized I have no cream. I was just wondering if you would get the same flavor using milk. I'm sure the consistency would be different, right?

Are you cooking just for you? i'd experiment if that's the case. Sure, it'll be a diff consistency. It's all about the taste anyways, right?

Well, actually I was gonna feed my bf. He's not picky or anything, I just don't wanna be all up in a hot kitchen (it's like 354984 degrees outside) if I'm just going to ruin it and have to order pizza.

Um, better wait for another response. I'm not too much of a cook. And I haven't made anything with dairy in well over a decade.

If you are making alfredo, it will be runny if you use milk instead of cream. If you have no choice...add extra flour and spices to thicken it and let it stand for a few minutes before serving. That should thicken it enough to be sauce and not noodles with milk!

DO you have any butter? Just add that to your milk and you shouldn't be able to tell the difference.

Use 3/4 cup milk and 3 Tablespoons of butter to replace 1 cup of heavy cream.

It won't be as rich and the consistency won't be quite as thick. ^ And yeah, do what Paris and CKXXX said.

I know this is probably to late, but if you have cornstarch, add that instead of flour. It won't alter the taste like flour will and is what is recommended for all the low cal alfredo recipies.

^Well I ended up not making it, but thanks for that tip! I know alfredo is an indulgence, so I appreciate the extra knowledge!
