I made this with cajun catfish last night and it was SOO tasty i thought i would share
1 bag frozen endamame
1 bag frozen corn
1 can organic black beans
1/2 cup red onion minced
1/2 tomato diced
Fresh Cilantro chopped finely to taste ( i like a lot)
2 T goat cheese crumbles
lite romano basil Italian dressing (or whatever you have on hand)
balsamic vinegar
garlic
pasta salad spices (mc cormic makes it, i highly recommend it)
Fresh black pepper
I boiled the endamame for 4 minutes, drained, rinsed in cold water
I just threw the corn into a bowl of warm tap water, strained it, then did it again. Perfect consistency, not mushy cooked, just cool crispy yummy.
Add it all to a big bowl and mix.
Tastes even better the next day.
