Asparagus or green beans? You could grill them with sesame oil and sesame seeds.




See i would think that dish doesn't need a side b/c of the noodles. I would serve it with a salad. Artichoke hearts sounds great too, I wouldn't have thought of that.
I would go with a lite salad with maybe some cranberries and a light raspberry vinagerette. I agree that a side might be too much since there are already noodles. But you do need to find a way to get the veggies in. The other thing I would consider is some grilled asparagus spears.

Do you have a Trader Joe's near you? They have Thai carrots that would go great with this. They are matchstick carrots with ginger, butter, brown sugar, and almonds.

I want to thank everyone for their imput! I ended up doing grilled asparagus because it's straightforward and I know how to do it already ( I was very pleased with the above recipe, btw). But, could someone tell me how they generally cook a green bean, pea, or artichoke heart side dish?
