Finally I decided to try out a recipe from my new favorite gluten/dairy free blogger:
GF/DF Mac and Cheese
I went to my health food store and bought everything I needed. Its pretty basic stuff, rice pasta and a bunch of spices and things I should probably already have. I think I did a pretty good job (although I don't know if its spot on) and it tasted great!! It was easy and pretty quick, I made the sauce at the same time I cooked the pasta. Now I have lunch for a whole week. I'm so excited that I found something yummy that I can eat and tastes like something I'm not allowed to have!
I hope that anyone who is going this route will love the recipe and the website. It has really inspired me! I can't wait to try everything elseShe even has a section that is vegan and vegetarian, all of the recipes from before she found out she had celiac's. Vegan/Veggies should take a look too!!
*NOTE: for the lovers of the cheese... it isn't going to taste like a cheese replacement. BUT it is creamy and reminiscent of the baked mac and cheese that I sometimes miss/NOTE*
