    Default Canning

    I just canned 15 jars of Brandy Peaches.
    I picked the peaches off the trees myself earlier this week and waited till they were the PERFECT ripeness.
    I am soooo domestic
    I think i will make DH waffles covered in brandy peaches for breakfast tomorrow.
    Now off to bed, I'm Exhausted!

    I've canned salsa, BBQ sauce, and pickled garlic. Haven't done any other canning, but I want to get into it this fall. Brandy peaches sound AWESOME! I want the recipe! What else do you do with them? (I'd be tempted to put one in my BBQ sauce.)

    I do a whole lot of cooking but I never can much of anything. I make a ton of sauces but just freeze them and use them within about a month. I could get into making and canning my own salsa, though. That sounds pretty tasty.

    I really want to can, but I am afraid that I would somehow fuck it up and give everybody botchilism.....

    My boyfriends gramma cans though I was thinking having her come over to our house and teach me. I love pickles, esp like speciality pickles with jalepenos, banna peppers, all that hot stuff, and I really want to make my own.

    I want to can, but I don't know how. My step mom cans alot though. I wish I lived closer to her, I'd have her teach me.

    I've made jam and canned it. I was so paranoid about steralizing the jars correctly, but it turned out just fine.

    Figs. Fig preserves.. chow-chow. Pickled peaches. Pickled okra. Dill and sweet pickles. " Put up" black eyed peas and cream peas.

    Dang..


    Here's a simple thing you can do and my kids use to love it.

    White vinegar
    Peeled cucumbers, sliced medium thin.
    Salt and a pinch of pepper.

    Put all of the above items in a plastic bowl and cover with plastic wrap.
    Let sit overnight and you have 'Fridge pickles!

    ^^^ I don't know about pickles, but that's pretty much a cucumber salad! Just needs a bit of sugar, some onion, and maybe a tomato.

    ...as a kid, i use to enjoy my grand mother and great aunt's home made jam. They packed the jam in the same jars since the 30's. I miss eating jam/toast with them on the old wood porch. Hopefully your grand children will remember your jam too.

    Nonononon! Don't do that, I got it from my Momma and so on and so forth. I kept a HUGE bowl of this in the fridge for the kids during summer time. They loved it and would pester me to death to make more.

    I tried canning some of the several POUNDS of tomatoes I've harvested thus far from my own backyard, but the lids didn't pop. Does that mean they're not sealed correctly? Ack, I'm so paranoid.

    It was my first time and I definitely burned the crap out of my hands. But at least I know my jars were sterile!

    Yep, lids have GOT to pop. Sometimes they do that after and sometimes they do it right after they cool. It's weird.

    Crow, my mom makes something similar, but she puts sliced onions in hers too. Is it soaking in a pool of vinegar? She makes it all the time, refrigerates it once and then leaves it on the kitchen counter. It's usually gone far too quickly to go bad.

    Yep, thats it. My Granny use to put onion in hers. Sometimes I will put a pinch of dill in it just for me. I like mine cold and in the fridge it seems to soak up more of that pickle-ey flavor. Nummy.

    I did fridge pickles! They were pretty good!! Nice and tart and yummy. I may have ODed on the vinegar a bit, but I liked it a lot! Thanks for the new recipie
