You know what, I probably SHOULD just release a cookbook, LOL! Every time I see a request like this I don't know where to start. What kind of foods do you like?
I first started learning to cook on soup. It's hard to fuck up soup. Once you learn soup, then you can master other cooking skills. Soup (broth-based, not cream-based) is healthy and delicious and everyone loves it!
I dunno how healthy chicken stroganoff is but I know how to make it and it tastes great. :-)
Healthy and vegetarian if you choose for those of you reading the vegetarian threads lately!
Stuffed peppers.
Cut a bell pepper pepper in half, add rice and beans and/or mushrooms or pretty much any leftover crap in it, add shredded cheese to the top and put it in the oven at about 350 for 10 minutes.
This is easy for people who can't cook and you control what goes in it.
Also spaghetti squash is easy. Cut in half, take all the seeds out, microwave in a tubberware full of water for about 5-10 minutes and once its cooled off remove the insides and it comes out like spaghetti. Add chicken, pesto, or whatever you like on your pasta.
ok. my mom taught me this and called it chicken stroganoff... I give this disclaimer because whenever I try to explain this to anyone they say they thought stroganoff was something different....lol.
But what I do is buy boneless skinless chicken... I season as usual(usually consists of grabbing every seasoning I can find in the kitchen) and fry it. Then once it is cooked.. I cut the chicken into several small pieces. Then I grab a deep pan and put about 1 can of table creme mixed with about a cup of tomato sauce(I go with the garlic flavored one)... once you get a pinkish type sauce you season it to your liking. Once that's done you dump all the chicken you cut up in this sauce and mix it well. And that's it. It's yummy. I usually eat it with rice and beans... but that's just me. Brasilians eat everything with rice and beans.lol. I also like to serve with those little chip type fries they sell in the chip aisle.

I invented the easiest chicken tortilla soup the other night. I squeezed half a lime over a chicken breast, sprinkled it with pepper, and baked it at 350 F for 20 minutes. While it baked, I chopped garlic and onion and sauteed them in olive oil (put the onion in for about a minute before you add the garlic; the onion needs a little longer to cook). Then I added a sliced carrot, sauteed it all for another minute, and added water, vegetarian chicken broth powder, a little Tapatio, the rest of the lime juice, and about a cup of hot salsa. I let that simmer on low while I took the baked chicken out and shredded it, and then I stirred the shredded chicken into the soup with a can of corn (drained) and a can of kidney beans (rinsed and drained).
I let that simmer together while I sliced corn tortillas into strips and fried them in about a quarter-inch of oil in a skillet. When they were crispy and brown, I drained them on paper towels. I scooped the soup into bowls, topped it with the crispy tortillas, and chowed down.
Total time to prepare was about 30-40 minutes. It's just as good without the fried tortillas if you just want a Mexican-flavored chicken soup. It's not gourmet, but it's healthy, very filling, and super-easy.
