    Default Crock-pot recipes for the cooking impaired?

    Hey everyone,

    So I started grad school, and as the typical poor college students, I need some cheap recipe ideas.

    I figured a crock-pot would be great, sinceI can set it up before class,a nd eat when I come home that night.

    But, I am an idiot, and have no idea how to use a crock-pot, or any good recipes.

    Any good recipes that are cheap, easy, and diet-friendly?

    First rule of crock-pots: Veggies on the bottom, meat on the top (unless ground), liquid last.

    My most basic crock-pot meal is BBQ chicken. Quarter a small onion and spread the chunks across the bottom of the crock. Break a couple of carrots into chunks and throw those in. Add whatever root veggies you like (sweet potatoes are very good in this). Put a couple pieces of chicken on top and then pour over about half a cup of BBQ sauce. Let it simmer on low for about 6-8 hours. You can use any kind of chicken, it doesn't matter.

    If you want to get a bit more involved, try this. Brown some ground meat (beef, turkey, whatever) in a skillet and drain off the fat. Mix up the cooked meat, as much chopped cabbage as possible, some garlic, chopped carrots if you want, about 1/3 cup brown rice, and about a cup of spaghetti sauce. Put it all in the crockpot and pour about 1/2 cup broth over it, and simmer on low 6-8 hours. The result tastes exactly like cabbage rolls but without the all-day effort of rolling them. My ex-husband used to BEG for this at least twice a week, and it's dirt cheap (nothing is cheaper than ground beef, rice, and cabbage)!

    Oh great thread! I was going to buy a crock pot then I realized I had no idea what to do with one so I put it back!

    Someone who decided to use their crockpot everyday for a year.

    It's a good source for recipes and most of them seem pretty easy (and they are gluten-free). Plus she includes a review so you can at least get an idea about the finished product.

    You ought to invest in a steamer too ( rice steamer .. brown rice with some onion soup mix in it is a good, easy thing to make if you feel like snacking )


    My crock pot recipes are not for the health wise, I mean really - I am southern and all.

    Yek-have you ever prepared anything with tofu or seitan in a crock pot? I've never tried but i wonder if it would soften it or anything.

    my favorite recipe came from my mom-Sweet and Sour cabbage. We're both improv cooks, so i don't have quantities for most of this.

    Cut up about half a head of green cabbage into bite size pieces. Brown hamburger meat(if desired. I don't. I'm veggie) Put in a bit of rice. Pour tomato juice over for broth, add lemon juice, salt, pepper, to taste. leave in the pot 6-8 hours, or until the cabbage is tender.

    I've actaully been craving this for about two weeks now. Hmm. I want more veggie crock pot recipes.

    I've wondered about tofu and seitan in the crock pot too.

    I usually stick with bean and vegetable soups. I haven't really done much lately with mine, but I should.

    Another cooking impaired essnetial is the pressure cooker.

    You can put frozen stuff, dry pasta or rice, some seasoning and water....and like in 15 minutes you have an awesome meal.

    I have not had any success with crock-pot tofu. I'm sure it can be done, but I haven't been able to. TVP loves the crockpot though! You can use it instead of ground beef. I've also done well with those Morningstar Farms veggie crumbles, though they're not vegan.

    I can't see any reason seitan wouldn't work, since it's so dense. But I've never tried it.

    Another good filler for vegetarian food is barley. Barley loves the crockpot, you don't have to pre-soak it if it'll be in the crock all day, and it has a delicious flavor and a lot of nutrients.

    hey I bet barley or even crocus ( sp?) would be good in that too!

    Ahhhh.

    I wouldn't put couscous in a crockpot. It only takes five minutes in hot water to cook couscous completely, so hours and hours in a crockpot wouldn't be good for it. I guess it would dissolve or something but I doubt it would be good. You could certainly serve a crockpot dish over couscous though, and it'd only take a few minutes to whip up the couscous when the crockpot dish was done.

    1 nice sized roast
    3 potatoes, diced into 1.5 inch chunks
    couple handfuls of baby carrots
    celery cut into 1.5 inch pieces
    1 onion, halved (do not break up the onion halves)
    1 packet lipton Beefy Onion soup mix
    McCormick steak spice (used for grilling)

    Throw in your veggies, except for your potatos. Brown your roast on all sides and stick 'er in there. Add just short of 2 cups of water and your soup mix. Sprinkle in about a teaspoon of the steak spice. Set to high for five hours. throw in potatoes for last hour and a half.

    That's what's in my crock pot right now!

    I see.. obviously I know nothing about the stuff as I can't even spell it.

    Red Beans and rice

    This is sort of a pain if you want to make it from scratch - there's all kinds of already pre-packaged RB&R if you want to go that way.

    Red kidney beans ( after soaking in salty water overnight )
    Plain white rice.
    Creole spice. Again, I like Tony Chacherys.
    Sausage. The polish/smoked/turkey whatever sort. For this you can use any kind you like, we use Boudan ( Pronounced Boo-dan) but I doubt you have it there.
    Water to cover

    Throw all the above ingrediants into a crock pot. Sausage can be sliced or left whole. Your preferance. I use three to four shakes of the TC's spice, your pallete might be a little more tender. You also might want to check once in a while just to toss some more water in.

    It's done when the beans are squishy and the entire dish has taken on the same color as the kidney beans.

    Usually served over white rice

    chicken breasts and a bottle of ranch dressing 6-8 hours on low

    a corned beef brisket and 1 can of beer with 1 can of water 8 hours on low

    I love my crockpot- did beef stew just a couple days ago- use one of the spice packets in the grocery store and just follow the directions

    Beef Stew
    1 1/2 cans of beef broth
    1 pound of stew meat
    3-4 carrots
    1 chopped onion
    3 celery stalks
    chop up a bunch of baby potatoes
    any other veggies u want

    1/2 tablespoon salt/pepper
    tablespoon of worchester sauce
    make sure everything is covered, if needed add a little water
    add 1/4 cup of flour prior to adding broth, so that salt n pepper can stick to it
    cook on low 10-12 hrs
    add another 1/4 cup of flour , stir u may need more, if u like it thicker

    Yek, I made that cabbage roll in a pot thing.. Oh. MY. GOD! Good. Like crack kinda good - I'd use two jars/cans of spaghetti sauce, but that's just me as I like it a little juicy. Thats going to be one of my staple cooking things now. Nummy!

    Chicken and dumplings.

    Chicken ( deboned or you can get the chicken in a package already filleted )
    Four cubes chicken bullion.
    One SMALL white onion.
    Pepper and salt to taste ( bullion is salty by itself
    Water to cover

    Put all of this in crock pot and let cook until chicken falls off the bone. Keep tasting the water to make sure there's enough chickeny taste there - as it's important later.

    Biscuits. Now, I'm lazy and my mx preference is pioneer. But for you brave souls here it is and Good luck.

    Two cups all purpose flour.
    Grease ( Crisco but lard is best for making these) One dollop with a large spoon.
    Milk.
    Salt.

    Mix grease into flour until it's sticky.. add milk and keep the flour handy. Keep adding the flour to the mixture until it gets hard to turn and sticks to the side of the bowl.
    Add that in heaping spoon-fulls to the chicken in the crock pot mix. Cover and the steam will make the dough puffy and thicken the mix until it's almost soupy. If you want to make sure the dumplings are done - poke with a butter knife. Clean = done, Not clean = not done.
