    I had a thought - and somebody else can start one for all the healthy folk..

    We all love to eat, and some of us like to cook and eat - so why not share your favorite recipes here..

    I'm going to put one that I like to make a lot and everybody that has had it seems to like it a lot too.

    Mamma's meatloaf.
    Pound of hamburger
    Pinch of salt and pepper.
    saltine crackers crushed ( you can use oatmeal or stale white or brown bread pinched up)
    one egg
    SMALL onion chopped ( dehydrated onions will work or you can use a package of onion soup mix.)
    Bell peppers red and green ( optional )
    Tony Chachery's creole spice.
    Can of cream of mushroom soup.
    one cube of beef bullion


    Mix above ingredients together except the soup and bullion- that comes last.
    Bake the meatloaf until it forms a nice brown crust. Make the mushroom soup with HALF can of water or milk. Your choice. Add the bullion and crush it partially. Pour over the crusty meatloaf and cover with tin foil.

    Cooking time depends on your oven and how thick you make your meatloaf.
    I always keep poking mine to check to see if the middle is done.

    You can pair this with your favorite veggies or creamy mashed potatoes and a salad. Yummy.

    This is one of my favorite recipes. Enjoy!

    Blueberry Scones


    Cook Time: 20 minutes
    Yield: 8 scones



    Blueberry Scones:
    2 cups all-purpose flour
    1 tablespoon baking powder
    1/2 teaspoon salt
    2 tablespoons sugar
    5 tablespoons unsalted butter, cold, cut in chunks
    1 cup heavy cream, plus more for brushing the scones
    1 cup fresh blueberries


    Preheat the oven to 400 degrees F.

    Sift together the dry ingredients; the flour, baking powder, salt, and sugar.

    Using 2 forks or a pastry blender, cut in the butter to coat the pieces with the flour.

    The mixture should look like coarse crumbs.

    Make a well in the center and pour in the heavy cream.

    Fold everything together just to incorporate; do not overwork the dough. Fold the blueberries into the batter.

    Take care not to mash or bruise the blueberries because their strong color will bleed into the dough.

    Press the dough out on a lightly floured surface into a rectangle about 12 by 3 by 1 1/4 inches.

    Cut the rectangle in 1/2 then cut the pieces in 1/2 again, giving you 4 (3-inch) squares.

    Cut the squares in 1/2 on a diagonal to give you the classic triangle shape.

    Place the scones on an ungreased cookie sheet and brush the tops with a little heavy cream.

    Bake for 15 to 20 minutes until beautiful and brown.

    I need meatloaf help, I have only made it twice (recipe is a bit different to yours, had tomato sauce stuff in it too) but when its cooked it is all crumbly!! not remotely loafy!! Do you have any meatloaf hints?? I'll try your recipe next time, but do you think I might be cooking it to long or not long enough or something??

    Nope, you gotta put an egg and some crackers, oatmeal or pinched up bread in it.. That makes it stick together and be "loafy" - cook at three fifty too. Any higher and you will have crispy critters, any lower and it'll be underdone. Let me know how yours turns out
