Anybody else here LOVE kimchi but think it's so gross how it's made? For those of you that don't know, Kimchi is a Korean side dish. The only kind I've had is made from chinese cabbage. They let the cabbage ferment, then season it with a mixture of different seasonings including brine....which is gross if you consider what brine is. Say you wanted brine from sardines. You'd let the sardines rot and the rank liquid that spews from them is salted, that's brine (at least, that's traditional brine, nowadays it may be heavily salted water). It sounds sooo disgusting but the kimchi itself is irrisistable. Anyone else share this view?
