Found this in the Coconut Oil Miracle book I was reading.... Super YUMMMMM....
Peel a medium potato (I used a sweet potato... mmmmm)
Head a skillet over medium or to 300 degrees
Put 3 tbsp coconut oil (good for you fat- can help you lose weight!)
Grate the potato
Put the potato evenly in the pan, use a skillet to press it into the oil
Cover and cook 10-12 minutes, no need to flip (I did anyway for a minute- makes both sides a little bit crisp!)
MMMMMMMMMMMMMMMMMMMM......................
Satisfies my sweet, salty and fried food cravings and still good for me!!![]()
