    Default Healthy alternative to potato chips!

    I am AMAZED... I have never liked kale in my life, or any dark green leafy veggie. I just made this recipe and it literally tastes like potato chips. Soooo yummy and quick and easy!

    Kale Chips--a.k.a Seriously Addictive Snack!

    Ingredients (use vegan versions):

    1-2 big bunches of kale
    1 tablespoon apple cider vinegar
    1 tablespoon oil
    coarse salt (to taste) or favorite seasoning blend (we love hot n' spicy Spike)

    Directions:

    Pre-heat oven to 350.

    Wash and de-stem kale. Chop or tear into "chip" size pieces.

    Spread onto baking sheet. Pour the apple cider vinegar, oil and seasoning (1-2 tablespoons) onto kale. Mix to coat all pieces.

    Bake for 10 minutes or until crispy. Serve immediately!

    Serves: 3-4

    Preparation time: 3 minutes

    These are SO good and addictive! They might smoke a bit when you make them but don't let them overcook...also you can roast califlower and brussle sprouts the same way and they are yummy!

    YES!!! This is one of my favorite snacks!! My boyfriend even likes them, he asks me to make them all the time. I skip the vinegar but add garlic powder and a little cayenne pepper. That's some good shit.

    maybe i'm a horrible and inferior human, but i just eat a reasonable amount of potato chips (the serving size listed on the bag) if i want them, and throw the bag out if i never get around to finishing them after several months.

    oil is perfectly fine in modest amounts, even the oil used to make potato chips. and the potato is a perfectly healthy vegetable all by itself.

    but i don't understand calorie obsession. i eat modest portions of many kinds of foods and figure that is probably well enough. i don't think swapping taters for kale is 'healthier'. different, certainly, but hardly 'healthier'.

    ^ When I said a 'healthier alternative', I was not referring to calories or carbs. However, having a variety of foods in ones diets is essential for good health.

    Nutritional information:
    potato- Vitamin A 1%, Vitamin C 48%, Calcium 4%, Iron 18%
    kale- Vitamin A 708%, Vitamin C 178%, Calcium 18%, Iron 12%

    These amounts came from the same serving size amount of each of these... As you can see, kale has more vitamins and minerals as potatoes. However, potatoes do have more fiber. So, depending on what you are going for- it's a toss up. But, yes... I would say kale is healthier.

    As for "calorie obsession", I don't count calories and I probably take in a helluva lot more calories than most girls on this board.

    I just don't eat shit, and as far as I'm concerned potato chips are shit. They're a completely useless food, so some of us appreciate recipes that are actually beneficial to our health instead of something to just eat for the sake of eating.

    Oh, thanks for posting this! I'm a huge fan of kale, not for the taste but because of it's fullness index rating... it makes you feel full faster than many other foods.

    shrug, potatoes are an excellent vegetable, and come in many varieties. my diet would be the poorer if i left the potato out of it. there are also many varieties of potato chips, all quite as healthy as kale. which is funny, i enjoy both kale and potatoes, although i'd never make 'chips' out of kale, especially since the vinegar is wildly unhealthy.

    a handful of potato chips hardly means one's diet is 'shit'. a few potato slices, fried or baked, are just not going to destroy the body or leave one unable to run ten miles in a day.

    entire cultures live off the mighty potato, including french fries/potato chips (such as the fine people of Peru). i just hate to see their food denigrated as 'less healthy'-- seems a bit culturally imperialist.
