    Search Getting in shape and eating better

    I really need to get back into shape but to be totally honest I'm not that motivated to workout. I'm thinking that I need to start with my workout videos and change up my diet. Mcdonald's, burger king, and jack in the box just aren't doing it for me. I'm coming to you all for help b/c I don't really cook and what I do cook is all that healthy. So I was hoping for a list of healthy and easy (I mean easy) meals to prepare. I was thinking just eat salads, boiled eggs, tuna, and fruit but I know I'll be craving yummy hot food. So Any suggestions would be great!!! Also I need to know how to make the foods b/c like I said I don't really cook!

    I know some of you will disagree with me, but try to cut out as much dairy as possible. It's difficult for women to digest some of it, especially milk. I just don't like milk in general for a variety of reasons. My sister in medical school even quit drinking milk for health reasons! Try Almond Milk, or Cocounut Milk, which is VERY rich in MCFA's (vanilla flavor, my favorite!) When I cut out all red meat and dairy my weight changed dramatically. Tons of protein and fiber. I make tuna salad, but I use vegenaise with grapeseed oil in place of mayo, and Grey Poupon. I also use a TON of curry powder and chopped celery, and solid white albacore tuna instead of the cheap stuff. This is cheap and yummy, and you can eat it with anything. That's my suggestion for now. Also, I love any type of eggs and turkey bacon in the morning. For fiber, I eat a TON of vegetables (usually raw), but straight out of the can sometimes. I'm more about eating healthy than eating for weight loss. I also love buying whole rotisserie chickens (like six or seven bucks for a whole one!) and shredding all the meat off to put on salads and sandwiches later. I can give you a bad ass recipe for a healthy, cheap, and YUMMY chicken tortilla soup, but it's a little spicy....

    I also eat a TON of salmon. I buy it, season it, and broil/bake it. I even save it and put it on salads later. Salmon is one of the foods with the highest protein amounts, and also omega 3, 6, 9. You need a proper balance of these for so many reasons, one being burning stored body fat, but that would be another thread.     Chicken Tortilla Soup Recipe (enough to feed a family of four!)

    1 rotisserie chicken (all white meat removed and shredded into pieces)
    1 bunch of cilantro
    1 white or yellow onion
    2 tsp. extra virgin olive oil
    1 can diced tomatoes
    1 or 2 (depending on preference) cans of diced green chiles
    6 cans of clear chicken broth
    1 package of monterrey jack cheese
    1 packet of taco seasoning
    1 bag of frozen corn (NOT sweet corn)
    1 bag of tortilla chips
    1 avocado (optional)

    Pour all six cans of chicken broth into a large pot. In a separate skillet, chop onion into large ish pieces and sautee with olive oil for a a few minutes, or until onion begins to get clear and soft. Add onion and olive oil to the chicken broth. Add shredded chicken, and entire can of diced tomatoes, including the juices. Add the green chiles. Chop the cilantro (I use scissors for this) and add to the mixture (minus the stems) Add taco seasoning. Bring everything to a boil. Add frozen corn at the end, and simmer for ten minutes or so. You can add crumbled tortilla chips, shredded cheese, and avocado at the end if you want. This soup tastes even better the next day!

    OH that tortilla soup does sound good! I think I'll use a little less chiles the first time just so I know how spicy it'll be. Thanks.

    Is it just women that have a problem digesting dairy? I have the oppisite of everyone, I can't eat. I am bipolar and I have mixed cycles all the time and I go a lonnngg time with out eating and I try to drink those boost drinks and I am trying to eat as healthy as I can bc its so hard for me to eat. I need to eat things that will give me energy. I just started see a counseler so hopefully he can help me !! but I also have had a lot of women problems, I think I have finally fixed most of them! but maybe it started with too much dairy? I thought protein = energy.. idk


    Also do yall have a exercise routine? I try to walk/run two miles three times a week. and I do crunchs but I want to work out my back,and bulid up some more butt!!

    I'm against dairy because of all the hormones and crap they pump into the cows. Also, I just don't believe milk is all that great for you, it's loaded with fat and bacteria naturally. Yes, it has Vitamin D and Calcium, but you can get just as much by eating leafy green vegetables. There are studies being done nowadays that show the difference in fourteen year old girls now versus in the seventies. Dairy cows are pumped with so much crap, that women are developing much earlier than they used to! Fourteen year old girls are much more developed than they were in generations past. IDK, something to think about. Diary makes me feel bloated.

    Taking fish oils will help tremendously with depression and mood swings. There have been scientific studies conducted on prisoners in the U.K.; the ones that took fish oils for two months or more were way less violent than those who didn't. Fish oils help so many different systems in your body, it's one of those mandatory things everyone should take daily. You really need to force yourself to eat, at least breakfast. You are throwing your blood sugar way off by starving yourself then bingeing. That alone will dramatically affect your mood.

    ya I try to force myself but some times I gag, but I have figured out if I chew it up it til it taste terrible I can swallow it.. but I am tryin everything meds and counsoler. I have been getting better. but I have been drinking orgainic milk for about a year. so I think that is better.. the cows are jucied

    My favorite and super easy and quick recipe:

    Rice & Beans:

    (Buy the 8 minute brown rice if you really want it easy... you don't need to measure or anything.)

    All you need is:

    Brown Rice
    Red beans
    A tomato
    Garlic
    Balsamic vinaigrette dressing

    Prepare brown rice.
    While rice is cooking, cut up tomato and garlic.
    Empty can of beans into pasta drainer and get rid of all the "bean sauce".
    Put beans in big bowl with tomato and garlic.
    When rice is done cooking, add to bowl and add balsamic vinaigrette dressing to taste.

    It's soooooo good and takes less than 15 minutes to make. It's also super healthy.

    raw milk and cheese don't have 'hormones and crap'. i prefer raw milk, ideally just off the cow.

    as for healthy eating, i like convenience, so i do things like chicken salad (salad greens with hot chicken pieces on top) or soups/stews in the crock pot. i cook some chicken whole and just rip off what i need for a salad. it's fun and easy and you get some 'hot' with your cold salad without wilting the whole thing.

    the crock pot is the friend of the lazy healthy eater. one can turn it on before bed and wake up to a nice soup or stew full of vegetables and meats and spices.

    I am vegan, I find that I feel healthier this way, and stay slimmer. Had a baby, and I am not as fit and lean as I was, but I am working on it. There are plenty of vegan "junk foods" so I have to watch out for these.

    Load up on apples with natural peanut butter for snacks, banana and berry soymilk smoothies too. In the morning, well 3 in the afternoon which is breakfast for me at least hehehe... I have a bowl of quick oats with soymilk, and natural pb and a tsp of real maple syrup. It is very satisfying.

    Someone mentioned something about black beans. I rinse a can of black beans, and add half a jar of salsa with some chopped cilantro and 1/2 cup water very filling and healthy.
    Do some yoga it will calm your mind and relax your body. You will be more motivated I promise. I was in a rut where I just didn't want to workout, and it passed. You sound like you want it so you can make it happen!!

    Firstly Macdonald's, burger king, and jack in the box are definitely no good for you - it's processed food full of additives. Just cutting that out will do wonders.

    Secondly, it's fairly easy to learn a number of recipes that are quick to cook. If (for example) you are going to eat salads, have them as a side dish to a cheese omlette.

    Omlettes are simplicity itself to make.

    1) Break 3 or 4 eggs into a mixing bowl. Beat them until they are evenly mixed, adding salt and paper to taste.
    2) Put a small non-stick frying pan onto low heat and melt a knob of butter into it.
    3) Put in the eggs and allow them to gently harden.
    4) When they're nearly solid, tip some grated cheese in.
    5) When that's melted, used a spatula to slip the omlette onto a plate, folding it over into half at the same time.

    As the omlette will take a few minutes to solidify, you can make the salad at the same time. For example, get some icebreg lettice and tear the leaves into small pieces, dice up some cubumber, get some small (cherry) tomatoes and cut them in half and add a few pieces of spring onion. Mix up together in a bowl and add a dressing.

    For the dressing for the salad, get a table spoon of vinegar and one of olive oil. Put into a small bottle (old mustard bottles are ideal) and shake for a couple of minutes - instant french dressing.

    That whole lot will take you about 5 minutes preparation and 5 - 7 minutes cooking.

    For scrambled eggs, just put your egg mix into the non stick frying pan and stir gently until they are almost solid. Spoon onto your plate - they'll continue cooking for a moment or so, so will still be lovely and moist when you eat them.

    Salad (very small) potatoes are your friend. After washing them, just put them in simmering water for 20 minutes. You can eat them hot with a knob of butter alongside your scrambled eggs and some peas. For the peas, just put frozen peas [which are lovely and fresh] into simmering water for 2 - 3 minutes: easy as that...

    Alternatively, let the salad potatoes cool, cut them into quarters and mix them into some mayonnaise - you now have potato salad. You could then have the potato salad with the green salad I mentioned above and maybe some salami or cheese.

    All absolutely simple to do and quick to prepare and cook - not to mention a lot healthier than a Macdonalds.

    I have heard mixed things about dairy, but I definitely agree that the hormones administered to cows make me very nervous. Now this is possibly the stupidest question ever... but do you include yogurt in the list of things to avoid? I eat plain yogurt with stevia sometimes for the probiotics. Is this something you personally would avoid?

    dairy is not just cow dairy. you can have goat and sheep dairy as well, particularly if you go with local/organic dairy products. many people who have 'dairy issues' find goat and sheep dairy products to be more digestible and yummy. also raw dairy of any sort is often a delightful surprise for some folks with 'dairy issues'.

    if you are already enjoying dairy or even if you are not, experiment! if it's giving you issues and you don't want to experiment, life without dairy is a fine, tasty life as well.

    you are in fact a unique entity and your body will tell you what works for it, even if it doesn't work for someone else. and food experiments are FUN!

    I'm just curious, I thought all milk had to be pasteurized, how can you drink it just off the cow?

    Dairy is known to cause inflammation in SOME people, often times of particular ethnicities. I would just say eat dairy in moderation, but that's just my opinion.

    My pleasure - and to continue my lazy cooking theme.....

    Poaching fish is very easy. Just get either cod or salmon steak. Put into gently simmering water (or fish stock) until cooked. (Work on 10 minutes simmering per inch of thickness). The flesh should change colour during cooking. Add peas and boiled salad potatoes as per the previous post and away you go.

    Chicken breasts - very easy to pan fry. Just get some chicken breasts. Rub olive oil + a little salt and pepper into the surface - I find the oil keeps the breast moist during cooking. Put a little bit of olive oil onto a frying pan. Fry the chicken breast on medium heat for about 8 mnutes a side. It should slowly change colour from pink to white. Make sure the centre has cooked properly and is not still pink).

    You can also cook chicken breasts under a grill. Again rub in the olive oil and cook for about 8 minutes per side.

    For a little treat, cut a small pocket on one side of the chicken breast. Cook with this side down first (8 minutes or so). When the first side is done, take the chicken breast out from under the gill, turn it over and stick some cheddar cheese into the pocket. Put back under the grill and cook this side also for about 8 minutes. You now have cheese stuffed chicken breast.

    Learn to make a basic sauce. To do this, put a small knob of butter into a saucepan and melt it. Add about a teaspoon of flour and stir it about until its been absorbed into the butter. Add a little milk, stirring all the time. The milk will gradually absorb the flour and thicken - takes about 5 minutes. And that's your basic white sauce.

    Now, you can turn that white sauce into other sauces easily.

    - Stir in a little mustard and you have mustard sauce - good with white fish.
    - Stir in some grated chese and you have a cheese sauce
    - Stir in some fresh white bread crumbs and you have a bread sauce.

    Cauliflower cheese - easy...

    Get a cauliflower and cut some florrets off (the little white heads). Put into simmering water until soft (10 - 12 minutes). Drain and dry, then pour some cheese sauce [see above] over the top. (You might just want to add a touch of mustard to the cheese sauce).

    Carrots - also easy. Peel, then cut into thin slices and put into boiling water for 5 - 8 minutes.

    Broccoli - like cauliflower, cut off the florets. Put into simmering water until soft (10 or so minutes).

    Mashed potatoes? Peel some potatoes and cut into 1" - 1.5" chunks. (use a type like Maris Piper - some potatos are better than others for mashing). Put into boiling water for 20 minutes. Remove and mash - adding in butter and milk (or olive oil) to taste. (You can buy potato mashers down most supermarkets).

    OK - so you can now cook chicken and fish dishes. You can have them with boiled or mashed potatoes. And you can accompany them with side salads, peas, carrots, broccoli or caulilower cheese.

    As a PS: add a little salt to any water you are using to simmer things - helps the flavour.

    PPS - you'll have to expirement a little with the times to suit yourself - I like my vegatables soft - other people like them crunchy - but after a few tries, you'll get things how you like them.

    you milk the cow/dairy animal, strain the milk (optional depending on the animal and how you're milking) and drink it?

    humans drink milk from dairy animals worldwide without boiling it first.

    it is not legal in much of the usa to drink raw milk for a number of reasons, but plenty of people trade it in barter and it does a thriving business where it's available. tasty stuff. cheeses made from raw milk are very very mild, even 'sharp' cheeses. also tasty stuff.

    it is always quite shocking to me how many people are disconnected from whole food consumption, even though a lot of work was put into making that happen by the government and corporations. it's still surprising, but then i have never really been far from rural living my entire life, so i never got a chance to forget where all the food comes from and how it gets into neatly wrapped bags and packages.

    lol I know she probably didnt think of it but it is funny.. umm my grandparents didnt do anything to there milk back in the day.. but I like mine to be pastur. I just think its safer, but hey lots of people did it back in the day and I think they live longer than us..

    Dairy is an issue for some people, both men and women, but the only way to really find out if it's an issue for you is to eliminate it from your diet for awhile.

    If you get leaner and feel less bloated when you're not consuming dairy, then it's a good idea to just leave it out of your diet. I personally don't have problems with it, but I know many people who will at least stop eating it when they're trying to lean out.
