I think you should thank your lucky stars you have a bartending job in mia beach. the other staff probably looked miserable from going thru a shitty off season as their sole means of support. what manager isn't bitchy?
dancing is HARD right now and will be even in "season" if there is even one this year. if you want to dance go for it but i wouldn't give up the bartending job. not to mention in miami it is all about your contacts and connections, your bartending job will give you more of a chance to make those than dancing ever will.
make friends and regulars behind the bar and you will be in control.
you didnt mention if this was sobo or nbeach. either way if you stay there for awhile you can always move on to a better hotel/club

i stopped dancing about a year ago and now bartend for a living. While i do miss it i think i'm currently in a better situation. While the money isn't as good as a great night of stripping it sure as hell is more than i could make in a bad night, and without being grabbed/licked/etc. If you go back to stripping i think you should keep the hotel bar job part time, just for the experience and potential references.

now you think you are "too good" to be taking orders?
that is what bartenders do....all day long....every single day!!
looks like you either picked the wrong job/career or you need to get down off that high horse you are on....

I think that would be a hard transition. Even though most may disagree. I actually went to bartending school, just so I would be 100% comfortable since I wasn't looking forward to that being my new job. Needless to say, I hated bartending. I missed stripping, just like you. I can understand the "high contact" thing being an issue as well. I find that in any club, you yourself really makes the rules. I've worked in "high contact" clubs and got away with giving "light contact". Dancing is a powerful job if you take the time to really reconize it, which it seems you have. I made the switch a while back. I worked in a very small bar that was part of a b&b in San Francisco. The management was great but the regular customers? OMG! Some of them were so mean! The first couple of nights i went home crying. But I stuck out and eventually those I won the respect of my hard core, alcoholic regulars. Turns out they were big tippers. And the tourists were great. After a few months, I was getting offers to work from higher volume bars in the area and I scoured a Friday night shift a popular karoke bar a few blocks down. I had followers and gained new clientele.
I eventually found a better paying job, but I stuck this job out for over two years.
Patience and the psychology you've learned as a dancer will come in useful. But it isn't easy at first.
