First, what type of vegetarian are you looking to become? Vegan, Ovo, Lacto, Lacto-ovo?
I'm lacto-ovo, but have decreased my milk/eggs a lot in the last few years. I also eat a lot of nuts, legumes, etc.
I've been vegetarian for about 2 decades now. What exactly are you wanting? I try to do raw foods twice a week. Before you majorly change your diet go have your iron tested. Then work with a nutritionist that can help you find things that are good for you to eat. Anemia is a huge problem with being vegetarian, so you'll want to test your iron levels once in awhile & take iron pills if needed. I take 180mg of carbonyl iron per day now. If your iron gets too low it can cause you to gain weight, so just be aware.
If you can, I'd also suggest you look into how to make vegan cheese for recipes.
Oh, & when it comes to vegetarian cooking, this Miyoko Nishimoto Schinner is the best I've found!

o kool thanks .... well im really new to this and still need to do my research...
i want to cut out beef,poultry and pork
and stick to fish i still will eat dairy just want to cut out the meat.....
i know nothing about this but really want to do it!

A lot of people eat fish but no other meat. They're called pescetarians. If you want to do that, it's at least healthier than eating red meat.
I'm a Lacto-Ovo vegetarian like Kylea, so I eat no meat, but I do eat eggs and milk (a lot of vegetarians are sensitive about eating animal products like that).
There is sooo much amazing vegetarian-friendly food out there. I haven't eaten meat in 4 years and I don't miss it at all. If you want to cook at home, one of my favorite sites for recipes is vegweb.com. I also like using vegan cookbooks, like Veganomicon or Vegan With A Vengeance, but using real cheese and eggs instead of the vegan versions. (Which I feel kind of guilty about... heh)
You can also use meat substitutes at home like Morningstar Farms veggie burgers, sausage patties, ground beef crumbles... Tofurkey sandwich meat... Soyrizo "chorizo"... not all "substitutes" are good, and some are *really* bad, BUT there's a lot of amazing stuff out there! Check out health food stores like Whole Foods and you'll be surprised at how much is out there.
Be sure to eat your vegetables. Try to follow the food pyramid, and get your fruits and veggies every. single. day. And definitely take a multivitamin! Most people don't get all the nutrients they need from the food they eat, but vegetarians/vegans especially need to be careful.
I really like the veg forums at theppk.com. It's a website/forum from the authors of the cookbooks I mentioned above... I *really* love their food, and they're an awesome community. The vast majority of members there are vegan, but it's still a good place to go if you want to be around likeminded people. Animal rights, health, support... etc.

I used to be a lacto-ovo vegetarian, and my ex is a pescetarian... Even though Im no longer vegetarian, I still dont eat that much meat. I could go back to the lifestyle easy... but the main reason I did to begin with was because I just lost any desire to eat meat and wanted to make sure I was still eating a healthy diet. So for me, meat substitutes were out as well...not that there were all the options back then there are now but they arent for me anyway since I dont have a taste for or miss meat.
And..the entire time, I refused to eat salads because I hated how everyone assumed I would be happy with a salad since I was vegetarian. I made a point to make some really awesome dishes for bbqs and pot luck dinners (I was an army wife back then..lots of opportunity lol)
Definitely do your research...I got a head start because as a teen, my brother in law had friends who were vegetarian, and they talked to me a lot about what they ate and what to look for, and also taught my brother in law some recipies to make for me(cause yeah, I dont cook and hes a chef lol) and even when I did go full blown as an adult, I got many books and read up nutrition and the lifestyle.
More so now than ever before, theres a ton of resources...beign a vegetarian isnt just cutting out meat, eggs, cheese, what have you...Id say read up on it, decide what you feel comfortable with and find out how to eat healthy within that.
I will say, the most amazing I ever felt in my life was as a vegetarian, and because I was on top of my diet, I never had to take vitamins. Once I started eating meat again, for some reason, I just wasnt so on top of it anymore, and really just ate crap...and *had* to take vitamins to even feel half as good as I did as a vegetarian.
Now IM used to feeling like crap all the timeBut do consider going back to the lifestyle, though I would probably be pescatarian this time around.

God, I hated this. My roommate wanted to go on a "roommates dinner" outing once and I said he could basically pick whatever, and he took us to a rib-shack.... I'm like "Are you serious? I know I said 'pretty much anything' but you had to pick a restaurant that is literally all meat?" His response was "Well, I'm sure they have salad."I don't want salad, fuckwad. I want real food!
Not that salads can't be good but it bothered me when people assumed I would be happy with tasteless lettuce and a glass of water.... lol ok, rant over.
I personally loved going to the bookstore and reading up on all the recipes I could. My favorite "beginner" veg cookbook is "The Vegetarian Meat and Potatoes Cookbook" by Robin Robertson. I really liked it to transition because the recipes use meat substitutes (mostly seitan) to make vegetarian versions of traditional dishes, so you're not being dragged away from all the foods you used to eat right away. Try to avoid going out as much as you can at first, unless you're specifically going to places you know are vegetarian-friendly. My biggest bummer with going vegetarian was going out to eat with friends and not being able to get anything on the menu... I could live without meat but it was such a pain in the ass to buy a lackluster meal because a restaurant didn't have any good vegetarian options.





Im not sure about elsewhere, but it seems like around here in Miami, there is a huge array of vegetarian options at most restaurants. Its not nearly as hard as it was like 10 years ago, when if I did go out, Id just order pasta with garlic sauce or something...
I still remember, some of the things I made which were my ex husbands favorites too (big time meat eater who when I said I was going vegetarian, told me as long as theres still meat in our meals hes good to go)
Philly hoagies instead of meat, portobella mushrooms sliced very thin and sauteed in olive oil with sliced onions and whatever seasonings I felt like.
Tofu eggrolls, made like chicken or vegetable eggrolls, except with tofuI made these from scratch and usually what I brought to bbqs
Stir-fried anything...vegetables with tofu with rice wine vinegar and soy. I mixed it up for variety, differnt types of veges, usually on rice, sometimes with pasta.
Hrmm..its been awhile, cant remember what else I made...
I do remember my hubby trying to help out, he liked hamburger helper and decided to make us a vegetarian meal with hamburger helper, minus the hamburger. Not only did it make me feel like we were uber poor, but it tasted awful. Points for trying though![]()



ive been a vegetarian for 6 years. dont try and eat things you dont like just because they are veg. i eat alot of hummus, amys frozen meals which are really good and organic, fresh fruit, salads, beans, nuts, soups, veggie wraps.
one of my fav things to make for my friends are veggie tacos with the boca meat substitute. super easy to make and delish. ill just cut up some romaine, some black beans,onions, some tofutti faux sour cream, and some organic blue corn taco shells. its pretty healthy and so good.



also veg sushi rolls are one of my fav things!
I've been a vegan for the past 11 or 12 years. I eat whatever I want! I wouldn't know where to start with a list of foods. I guess I cook a lot of rice-and-bean types of dishes, a lot of curry-in-a-pot types of dishes, and a lot of whatever-vegetables-look-fresh-stir-fried types of dishes. In the wintertime lots of gumbos and soups. I stay away from fake meat, not for health reasons, just because I think it's almost as creepy and gross as real meat. Usually after work I just microwave something quick; any reasonably well-stocked supermarket will have some yummy convenient options. (TastyBite, Amy's, etc.) Even if you do decide to still eat fish sometimes, congratulations and good luck!

I hope this isn't threadjacking, but do any of you ladies have advice for eating a protein heavy vegetarian diet without meat substitutes? I want to go veg but I gain weight every time I try because I never feel full. My body looks and feels best when I eat a lot of meat and fat, so it's been hard for me to work around. As a compromise I've been eating free range local poultry but if I can make a vegetarian diet work for my needs I would gladly become one.

I feel you though, vegetarian diet for me just bloats me so I allow myself fish and eggs.
I don't think I'll eat land animals again, but when I eat fish, eggs, and occasionally sheep or goat milk products I make sure they are organic as well as free range.

I've been a vegan for about the last 9 years; I was a vegetarian for years before that.
I certainly can't top the rest of the ladies in the wonderful menu and cookbook suggestions! They're wonderful!
And I heartily agree: being a vegan or vegetarian is not just about removing something from your diet; it's about following a healthful diet, filled with foods that you enjoy and are good for you.
And definitely consider vitamin supplements. My doctor has me taking a vitamin B 12 supplement daily, which you can purchase in a vegetarian formula.

We eat vegetarian dishes 3 maybe 4 times a week at home, and it's no more hassle to prepare and cook a vegetarian meal, than it is to do one with meat.
