I just found this and it is AMAZING!
- 4 boneless pork chops, 1/2 inch
- 2 tablespoons vegetable oil
- 8 ounces crushed pineapple in juice
- 1/8 cup white sugar
- 1/8 cup brown sugar
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice
- 2 tablespoons Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Directions:

Preheat oven to 350 degrees.- 2
In a bowl combine all ingredients (except the pork chops and vegetable oil) and set to the side.- 3
Heat the oil in a heavy bottom oven proof skillet until the oil shimmers.- 4
Pat the chops dry and add them to the hot pan.- 5
Cook for two minutes on the first side, flip the chop and cook for an additional minute.- 6
Transfer the chops to a plate.- 7
Pour the excess oil out of the pan (but don't wipe the pan out).- 8
Add the sauce mixture, scrape up the browned bits on the bottom of the pan.- 9
Simmer the sauce over medium heat, stirring frequently until sauce is thick and glossy, about 4- 5 minutes.- 10
Take the pan off the heat and add the pork chops to the pan, turning to coat in the sauce.- 11
Place the skillet in the oven and cook for 15 minutes.- 12
Spoon the sauce on top of the pork chops and serve.
