Do you have a go-to recipe that you cook if you have guests? Or just something you do really well?

My friend taught me a recipe that involves par-boiling some potato quarters then shoving them in a casserole dish with turkey, bell pepper, garlic, green olives and lemon juice. Pop the whole lot in the oven for about 30min, crumble over some feta cheese and return to the oven until cheese begins to brown.
It's easy, low maintenance and very, very tasty.

Pasta. It's really quick and easy to make and one of the first go-to dishes I learned to cook when I left home.

    Parmesan Orzo
Or single-serving baked macaroni and cheese, from scratch of course
Or a goat cheese spread...really soft chevre, rolled in fresh chopped chives, rosemary, and flat-leaf parsley, served on toasted baguette slices
Or hazelnut-crusted chicken served with gorgonzola sauce

See a trend here? ...I FUCKING LOVE CHEESE!!!

^ LOL, yeah, I make that whenever I'm having people over. If I can get them to get past their weird phobia of goat cheese, they love it. But some people are just amazingly picky eaters and don't trust any food that isn't from McDonald's or the frozen snack-food section of Wal-Mart.

My 'signature meal' is Spaghetti Bolognese. I got the recipe from 'The Times Cookbook' and it's the perfect 'feed-all' for all occasions.....it's filling, nourishing...and quick.

Chicken parmesan and omelettes. I love to cook. Rarely use specific recipes, just wing stuff with whatever I got.

I cook all the time! I used to love chicken cordon bleu casserole. You can make it healthy and filling ... you just need to get the low fat, not use "too much" cheese, etc. Sooo good!
Anyway, I'm on a "no meat" challenge so no more chicken!
I eat rice every day. I make fried rice however it is healthy because I don't use butter/oil, just that cooking spray, I use brown rice, I add in lots of veggies, tofu, and an egg or two (scrambled) ... then a bit of soya sauce. Sometimes salt or pepper if it needs it. Sooo good! It's filling. I have a small bowl almost every day.
I love this cauliflower and potato recipe: http://healthy.food.com/recipe/curri...potatoes-61850 ... yum!

Chianti braised short ribs over rosemary mashed potatoes. Ridiculously easy, and impresses people every time.

I'm really into baking. I made a honey and rosemary cake for my mother's visit, and now I'm making peanut butter and apple cake using homemade peanut butter. Mmmmm.

My favorite thing to cook is this high-heat roast chicken recipe:

    http://www.epicurious.com/recipes/fo...Chicken-231348

It's EXTREMELY EASY and holy fuck it is the best chicken I have ever tasted, EVER. It has a delicious crispy & salty skin with the juiciest, most tender meat inside. Since then I've tried a few other high-heat methods but none have come anywhere close to the beauty of this recipe.

If you roast a whole chicken, make sure to put it on a rack or otherwise the bottom will get all soggy. I usually just use this method to cook up bone-in skin-on chicken thighs (my favorite part of the bird) for a very quick & easy dinner. It only takes about 15-20 minutes in the oven, and even if I accidentally leave them in too long, the meat rarely gets overdone because it's sealed in so nicely by the skin (although the skin itself might start to burn which you really want to avoid because it's the best part!)

    I'm getting hungry now...
