    Question Salad Recipes, please!

    So I'm finally jumping on the salad bandwagon. I always hated them before, not because I dislike vegetables and fruit, but because I found them boring and I was always hungry 15 minutes later.

    Now that I eat meat again, give me your best salad recipes. Bear in mind I am allergic to coconut and also do not eat:

    Squash
    Okra
    Any kind of melon
    I can't have anything very spicy
    Ranch dressing
    Cold pasta

    That being said, give me your best FILLING salad recipes!

    I really enjoy:

    Spinach
    Roasted butternut pumpkin
    Avocado
    Cucumber
    Beetroot
    Fetta
    and Balsamic vinegar dressing

    Also:

    Mixed lettuce
    Grilled chicken
    Cherry tomatoes halved
    Fetta
    Cucumber
    Spanish onion
    Avocado

    Mixing good fats (pine nuts, avocado, olive oil etc) or adding a protein always helps to keep me full.
    Some mistakes are too much fun to only make once.

    Sunflower seeds are soooo good in salads!! I have two favorites that I alternate between, I need to start getting more creative.

    Spinach/baby greens
    bell peppers
    broccoli
    olives
    chickpeas or kidney beans
    onion or tomato
    sunflower seeds
    italian or balsamic vinaigrette


    Spinach or baby greens
    crumbled goat cheese
    diced green apple
    candied walnuts
    dried cranberries
    champagne vinaigrette or balsamic

    Hmm no pasta? I like to boil up Tortellini, drain it, and put into some tupperware with herbs and olive oil. I add it to salads like baby spinach and grilled chicken.


    Add a diced boiled egg for the complex proteins?

    Spinach, grilled and thin sliced chicken, with candied pecans, and balsamic vinaigrette.

    Since I don't eat dairy, I only use apple cider vinegar w evoo. I like mixed greens, but spinach more. Cherry tomatoes, red onions, artichoke, hearts of palm, chickpeas, shredded carrots, salted pumpkin seeds, radish, cucumber, & quinoa.

    Quinoa and chickpeas do the filling.

    I like the Annie's Organic Woodstock dressing, it's basically tomato and tahini! I cut up a head of romaine, throw that dressing on there, and whatever else I can find, lentils, chicken, etc. I always add crushed red pepper to my salads also, but that might be too spicy for you Med.

    I found a recipe to make your own, it's a very rich, filling dressing, modify as needed:

    I had a strange slaw & oil base salad. It was coleslaw but with peanut oil & uncocked chopped up ramen noddles which had a strange crunch & roasted sesame seeds, it was good.

    I even like a cold tomato & onion salad, with balsamic.

    I usually dress a salad like pasta.

    Spring greens, tomato, a little onion, black beans, chicken, and salsa. A little avocado is great with that, and a small amount of cheese if you like.

    Tonight, I made a salad with:

    Mixed baby greens
    Thin sliced honeycrisp apples
    Thin sliced carrots
    Sliced cherry tomatoes
    Sprinkling of cheddar cheese
    Around 5oz of grilled chicked

    I dressed it with Italian dressing. It was very tasty, and lasted me around 3 hours. This is an improvement.

    Im pretty basic with my salads. This is what I usually make;

    - romaine lettuce
    - tomatoes
    - cucumbers
    - bits of broccoli and carrots
    - red onions
    - sometimes I add bits of feta cheese

    dressing
    olive oil, vinegar and lemon juice mixed together, add pepper and paprika if needed

    This one is more on a sweeter side

    spinach mix (red and green)
    green beans
    red onion
    tomatoes

    top it off with sun flower seeds (non salted), and add balsamic dressing

    More proteins like eggs, kidney beans, chickpeas, lima beans. That will make it last for you. The other stuff is carbs (tomatoes) that burn up quick or indigestible fiber.

    Fats like olive oil too will curb your cravings for more, and dried fruits with the natural sucrose will be the sweets to curb that craving.

    My favourite is spinach or rocket with chickpeas and ricotta or if I'm feeling naughty Haloumi.
    Also spinach, pumpkin, beetroot and walnuts and feta.
    Spinach, feta, pumpkin, pinenut and green bean.

    i got tired of paner'a tiny salad portions so instead i buy their dressing (they sell it for about $4) and then i make my own:

    romaine lettuce
    spinach
    red onions
    gorgonzola cheese
    tomato
    chicken, if i'm really hungry
    fuji apple salad dressing

    I love fruit in my salads!

    Mixed greens
    Sliced strawberries
    Crumbled blue cheese
    Candied pecans or walnuts
    Grilled chicken pieces

    And then some kind of sweet dressing, like honey mustard, orange poppy seed, or a fruit vinegarette.

    My favorite lately is Ceasar salad.
    Romaine
    Crutons
    Olives
    Cucumber
    Tomato
    I'm vegan, but you could add chicken to it, it might not taste bad with garbanzo beans, though not very traditional.


    My all time favorite is:
    Mixed greens
    garbanzo beans
    shredded carrot
    avocado
    shredded beet
    tomato
    and a dressing from a little apple cider vinegar, honey, a squirt of dijon, and some olive oil. It's basically a vinaigrette version of honey mustard.


    Also, a small scoop of cold quinoa in salad is really good. Got this idea from Trader Joe's. They have AMAZING salads!
