I need some delicious salad recipes. Vegetarian or pescatarian only please. I want to get back to primarily only eating salad, but I'm really bored of just plain caesar and vinaigrette. Suggestions?

I'm obsessed with pear cheese and endive salads! Other than that I sometimes make spinach salads with sun dried tomatoes, roasted red peppers, onions, goat cheese, and a bit of hummus as dressing. The hummus gives it an unconventional texture for salad but I think it's more filling.
grated carrot and beansprouts. for dressing -fresh lemon juice, a little olive oil, salt, tsb english mustard and chopped fresh coriander
or
chopped red cabbage and red onion. dressing - fresh lime juice, tbs balsamic vinegar, black pepper, 2 red chilli's (or more if you like the kick), tbs brown sugar, chopped fresh coriander and mint

I use ponzu sauce and lime as dressing, soooo tasty and virtually no calories! I like to get a huge bowl and throw in the following, give or take: romaine lettuce, tomatoes, avocado, red onion, shredded carrot, cucumber, cilantro, and sesame seeds, then i put the ponzu and lime over it. The cilantro mixes really well with the dressing and gives it a super-fresh taste. For protein I will throw in whatever meat I can find - grilled chicken, canned tuna, whatever. If you are feeling especially special you can pick up some seared ahi from Whole Foods and put it in...YUM!!
I stole this recipe from a special they were having at one of my favorite recipes, it's sooo good!
Berry & Citrus Salad Salad
...a melange of strawberries, oranges, mangos, jicama, cherry tomatoes, asparagus and green beans blended with chopped organic baby mixed greens. tossed in a blood-orange dressing. topped with creamy goat cheese and candied walnuts
