    I'm all for healthy foods with lots of calories. I have such trouble keeping weight on, and now that I'm back to dancing I'll be burning even more calories. I'd just make sure the cheese was organic, grass fed, un pasteurized, and the coconut oil was virgin and unrefined. Yay for healthy fats and calories!!!

    quinoa is amazing. i love the white quinoa but the red is also delicious. i use a very small amount of olive oil and brown it in a pan, then add water and simmer for 15-20 min (don't want it to be mushy tho). i add some garlic powder. you don't really need salt.

    i've noticed that a lot of people use a lot of salt to make healthy foods taste better. you can often use other spices to substitute for salt. too much sodium can make you retain water, and it will mess with your heart. i have a huge spice rack on my wall and get fresh spices from the downtown market. yum.

    MY healthy throwbacks:

    *Roasted red pepper hummus partnered with either carrots, or seven grain honey flaxseed crackers
    *Carrots (2),celery(2),onion(1/4 of it),garlic (Clove),pablano pepper (less than 1/4), throw all that into a hot wok, with a small amount of extra virgin olive oil, cracked black pepper, very very little salt (less than a pinch...much less), let it cook up and serve with natural brown rice. YUMMMMYY!!
    *I love CLIF white choc. macadamia nut bars, or any of the CLIF Mojo Bars or Odowalla bars
    * Tons of grapes, strawberrys, blueberrys, and fuji apples
    *Unsweetned apple sauce
    * Fab Salad: Spring mix, onions, carrots, avacados, tamatoes, fat free or reduced fat Feta cheese, extra virgin olive oil with balsamic vinegar, touch of cracked black pepper.
    * Pita pizza's!
