    Default Gluten Intolerance

    so i think i have this.

    During the second half of ramadan, i gave up eating refined carbohydrates and grains. I knew that cutting out refined carbs would have good effects (I have PCOS so blood sugar spikes = bad) and i have cut out refined carbs before, but this is the first time i ever completely stopped eating grains. And the results were AMAZING. like my skin cleared up, i felt great, i got my period regularly for the first time in my life without hte assistance of birth control etc.

    the results seemed to good to just be from limiting sugar. so i think it is wheat that has been causing me all these problems. Anyway, since coming back to the states i have been back and forth with keeping wheat out , and it seems when i fuck up i can see the consequences pretty quickly. Like i went off the gluten-free wagon the past 3 days, and yesterday my grandma basically forcefed me pecan pie (im visiting family right now since my grandad just died) aaaaand now i have 3 zits on my face... and one of htem is not the surface kind but the deep kind that hurts. i havent had one of these in a minute. and my stomach isnt feeling so good, and im bloated as hell, and in general i feel tired and lazy and unmotivated.

    so ive been reading more on gluten intolerance. i have read a lot of things from girls who have had eating disorders and once they gave up gluten their eating disorders went away. i have also read things from girls who had pcos, and when they gave up gluten their symptoms went away. Also, it seems since i am not consistently eating gluten, getting tested for intolerance is not an option (i guess you will only test positive for it if you are eating it consistently?)

    and today i read some stuff that say it takes a couple months for your system to clear of gluten. which means my origninal plan of mostly eating gluten free but sometimes indulging in pie when i visit my grandma might not be a good plan. also it seems like once i start eating things wiht wheat in them, i have a tendency to binge. i swear, the stuff is addicting!

    does anyone on here have gluten intolerance? i would like to hear your experience.

    i dont think i have that, because when i was like 2 apparently i was tested for it. unless it develops over time?

    Allergies increase and decrease overtime. So what was mild or non existent may become serious and vice versa.

    i grew up in a gluten free house since my father and sister both have allergies, there are soooooo many delicious recipes out there for fod you never thought you could eat after giving up gluten. my fav substitute is quinoa flour!

    For intolerance and allergy testing you can do something called an elimination diet. You don't eat the gluten at all for a few months, then reintroduce it back and see if you have any symptoms reappear.

    For this to be effective you need to remove all gluten, which can be hard because there is gluten in so many processed foods. Sauces like soy sauce and alfredo have gluten, meal replacement bars and granola bars, many things that don't have gluten can be cross contaminated like cereal and snacks. It is hard to eat out because restaurants usually don't have many gluten free options. You pretty much always have to read the ingredients label or ask what the ingredients are if at a restaurant or home cooking, which is annoying. And I don't drink but I think beer and some other alcoholic drinks aren't gluten free as well.

    I don't know much about testing since I am allergic and get a reaction right away. I would ask a doctor for an allergy test, celiac is hard to test for as they have to scrape a tiny sample of villi in your stomach. Intolerance and sensitivity may be harder to test for, but if you feel better not eating it then I think that is sufficient proof.

    If you like to cook there are tons of recipe blogs, like gluten free goddess. There are also a ton of gluten free products at health food stores.

    I had to go casein-free which pretty much also became gluten-free for 3 years (my daughter had a casein allergy). That sucked. And my cousin has gone gluten-free cuz of her son.

    But back to your question. I found a lot of really good websites with some amazing recipes. It took a while and was at times expensive to cook the recipes. And eating at restaurants and friends houses was extremely difficult.

    If you have the time and energy and dedication to prepare your own food then it's fine. If you want Athena when
    I get back home I can find some of the websites. You may already know some of them tho.

    I dont have a gluten intolerance but Im intolerant to nightshades (potato, tomato, eggplant, peppers). My life was a living hell before I figured it out. It started around 22 and it took until 26 to figure out and in that time I basically never slept and spent almost every hour of the day in pain. I can still eat these foods sometimes depending on how they are processed. For example I can eat french fries but not a baked or mashed potato. I can eat a tiny amount of tomato like in salsa or on a pizza base. I cannot eat any eggplant at all or I am in terrible pain and peppers maybe just a sliver. Its like if I eat over a certain amount it builds so if I ate pizza 2 days in a row Id get a stomach ache but just one day is fine. These stomach aches are so bad I literally cannot do anything. So its easy to avoid. Definitely listen to your body!

    Gluten sensitivity on the other hand can cause all sorts of various symptoms and has no diagnosis. People with gluten sensitivity are able to have gluten rarely.

    Again, I really recommend talking to a doctor. There are lots of clinics if you don't have insurance. If you have any questions about gluten free or need recipe tips feel free to PM me .
    i read symptoms for celiacs, and i do not think what i have is that serious. i think its just run of hte mill intolerance/sensitivity. Also, since i have a lot of stuff to do the next few months, i dont have time to go back on a diet that i know will make me feel sick so i can spend time at hte doctors. I need my energy!!! and preferably good looking skin too!

    yea i htink i will remove all gluten for a while. then i will eat a big loaf of bread and see if i throw up or something. i eliminated all gluten for 2 weeks (food is much simpler in turkey so i always knew what i was eating. mostly just produce and meat) and then ive been hardly eating food with gluten in it lately. i think i wlll try to be 100% gluten free for 3 months or so.

    ^ my uncles wife is a naturopath hippy lady and I was telling her my symptoms and when I got them. For example I'd get a horrible stomach ache after eating plain chicken and potatoes no sauce and she suggested it was nightshades. Which apparently is also common but most people cant figure out thats what it is. Cause I'd get them when I had plain food I never thought it was the food. I'd been to the doctor and had ulcer tests and ultrasounds and all these tests and nothing came up. The doc said it had to be something I was eating. So I cut them all out and have pretty much never had a stomach ache since. If I eat any of those trouble straight away so it became apparent that was definitely the cause.

    I recently joined the gluten free bandwagon to see if it had any effect on my digestion.. I think it's too early to tell but I will report back after a while. This article is great.

    Imma sound like tempest for a min but....the Paleo diet works for a lot of people cuz it recommends cutting out nightshades and pretty much all grains. It's like the super allergy diet or something. also suggests cutting out legumes (no peanuts!).

    A close girlfriend of mine has a very intense case of celiac. Like, one bite and 10 mins later she is on the floor curled in a ball. It's really terrible. Her job requires her to travel a lot, so often she brings her own food. And when I hang out with her, we have to check menus and stuff of course.

    BUT. On the whole she eats a VASTLY better diet than people who eat wheat. LOTS of produce, lots of lean proteins like seafood and chicken, lots of greek yoghurt, etc. To me it doesn't seem like a deprivation diet at all!

    I pretty much eaten gluten free, but not deliberately because of the gluten. I've never really liked bread, pasta, rice etc so avoiding those foods is not a big deal. The only time I really eat gluten is if I'm eating lunch meat or an occasional baked treat. This way of eating REALLY leans you out, makes you feel really healthy, my skin has always been great but it seems even better. My hair is living proof of what can happen. I was drinking a lot before, but the past 9 months have been amazing sans carbs and booze.

    Two things I will caution you against:

    1. Sometimes, doing this suddenly can make you really constipated. It happened to me.
    2. You need to increase the volume of food you're eating, or you won't get enough calories.

    I originally stopped eating grains bcause i was on something similar to paleo diet (i had tried paleo before but never gave up drinking to do it so of course it didnt work). so this time around i was like 'ok, i will eat basically primal foods.' which included giving up wheat. and hte results were way better than i thought they would be, which is why i think it was not just hte fact i was eating healthier but also maybe because gluten is affecting me. like i said, i have NEVER gotten my period naturally one month apart, without birth control. usually i get it 2-4x a yr if i am not on BC. but after i got rid of the grains i got it came naturally 2x in a row.

    im not giving up nightshades though. im going to basically go on the paleo diet. but tomatos are fucking awesome.

    I'm primal....most of the time!!

    Seriously though - gluten and grains absolutely SLAY me - say helloo to weight gain, psoriasis outbreaks, spots, bloating, tiredness, lethargy....AND I get sick more easily. Whenever I am gluten-and-grain free, I feel so much happier. It also goes for sugar and dairy, so paleo/primal works really well.

    That said, I am always going to balance my diet with my desire to have fun. I will never give up drinking - what I do instead is stick to wine (preferably organic and NSA) and high-end spirits on the rocks. No beer, no mixers or sugary liquors (like Khalua, Hypnotic, etc)....I'll have the occasional gluten-free beer, but most of them are rice-based, so it still bugs me. I LOVE cheese, (luckily, primal allows butter!) but I stick to occasional high-end cheeses, rather than cheap crap in everything.

    I'll also allow myself "treats" every now and again - usually I'll allow myself a little rice (in sushi) and sometimes a bagel on a Sunday (my day of rest), and a cupcake or dessert on special occasions (birthday, anniversary, xmas).

    If you are simply intolerant, I wouldn't worry too much about having the odd treat - I do, and it is fine. You may, however, notice more of a reaction to them - it isn't that they are suddenly affecting your body more, it's just that once you cut that stuff out, you feel SO much better - so a little bloating or pimples will be more obvious to you (whereas when you were eating it all the time, it was just par for the course).

    Have a look at primal and paleo recipe sites, like MarksDailyApple, Fast Paleo, etc. I prefer them to gluten-free sites, because most gluten-free sites focus on making gluteny food with substitues (rice/corn/potato flour) and you may find that they both you just as much, and don't taste the way you want.

    tell me about it!! This has totally been me lately too. Anytime I eat lots of carbs I bloat up like I'm 6 months pregnant.. and sugar and alcohol give me anxiety afterwards. What the hell!!

    I am gluten free my digestion is bad if I eat it, I lost loads of weight when I stopped eating it too, I eat it very rarely.

    yea i think that gluten is responsible for a lot of mystery health problems in people.

    Jeska- you said you went gluten free a while ago and were waiting to see how hte results were-- any feedback? or you still need to give it more time?

    Oddly enough I think I have an intolerance to quinoa! Every time I have it I get a terrible stomach ache... At first I didnt think that could be it but now I'm positive every time after I eat it about an hour later it starts. Damn!

    I have celiac disease but I seem to be intolerant to all grains, even gluten free ones. They make me retain water like crazy and give me digestive problems and make me feel tired and lethargic. I lost a lot of weight when I cut them out of my diet, about 30 pounds in total. Now I'm almost 100% paleo and my health has never been better.
