Sarah, unfortunately, once a check is signed it can be cashed by anyone. That means if someone forged her signature, the check was then payable to anyone. I worked at a bank & we dealt with third-party checks all the time. We usually put them on hold for three business days, except when we knew the payee (like it was an account holder's daughter, etc.). But seriously, I NEVER endorse my checks until I'm standing in line at the bank b/c if I drop them on the way to the bank they have my signature on them, anyone can cash them.
However, it's all very traceable. And you're right, if she can get a photocopy of the check, she can see where it was cashed. Checks have to be encoded. There will be an addition to the MICR number at the bottom of the check, where the routing & transit number, the account number, & check number appear, and that gives the info about the amount of the check, plus there will be an endorsement on the back showing the bank where it was deposited.
