There are a lot of threads on licensing and the risks associated with it on here, so I recommend running a search for those. The gist is that, unless you're going into teaching, some other public facing job, or will need a license for your vanilla career that has a rather stringent code of conduct, you will *likely* be fine -- provided you don't get swept up in any raids/busts and get charged with anything.
Every employer runs their own background check, which can be as simple as just calling your references to as in-depth as contracting it out to an outside firm that looks thoroughly. Your best bet would be to find out more about the dancer license in your area (is it public record that you have one? how does one access the public record? etc.) and maybe chat with a few people in your field (the accreditation board if applicable) to see what you can expect from a background check. Rest assured, there isn't a centralized database of all people and everything they have ever done that all employers have access too. In most cases, they have to go looking for the license to find it.
Your future employers will likely be able to "find out" about your exotic dancing liscense, yes. Most are public record, though it takes some hunting to find (there's not lists of exotic dancers on the internet organized by municipal region for example). But if someone reeeeaaaallly wants to find out, they will. So it is a chance to consider. I didn't do my research as well and found out my liscense was public record after I got it. The other thing to consider though (which is how I rationalized it to myself) is your ability to complete your education WITHOUT obtaining a liscense to dance in your area--this depends on what your other options are for income and how viable they are. I know I wouldn't have been able to complete my education without obtaining a liscense to dance in the city I went to school in--and that's exactly what any employer who asks me about it (if they track it down) is going to be told.
