is it alright to screen record your own shows (or even free chat) so you can't get scammed? sort of like chargeback protection for yourself?
also, to keep a log of the people who are in your chat?

I do.

It would take up A LOT of hard drive space to record every single show and especially free chat. When the encoder saves a file, it's huge. Also if you're using the encoder to record, you couldn't just push a start button to record only the private portion, it records from the time you start the encoder to the time you stop it, so you would have to either record everything including free chat, or start and stop the encoder before privates which would be unrealistic and result in guys leaving.
Also, if you plan to be successful and therefore get a lot of traffic and spenders, it would be nearly impossible to keep track of every single person who came into your chat room. Tons of them leave so fast you wouldn't even have time to copy their name down.
I don't know that doing any of this would really provide you any level of protection. All cam sites already record or monitor our streams to some degree anyway, so they are going to use their own resources and their own word when it comes to determining things like chargebacks.

Oh I see! I have an external hard drive (2tb) and I planned on using a screen recorder to do so like CamStudio. I wouldn't know anything about recording through an encoder though. I just would want to protect myself against guys claiming I didn't do what they asked in private/exclusive (I know it's rare). Once x amount of time has passed, I'd delete it.
But if it's that impractical, I'll put more thought into whether or not it's worth it.

I have a few concerns with this idea. Now, don't get me wrong--I can see where you're coming from about hating guys who claim you didn't do something to get a charge back or to give a low rating, but I think there are less time and memory intensive ways to help that.
1) A guy says you need to do X item that you explicitly state you don't do in your profile or verbally during the show. Verbalize that you will not do that request AND type it out. If he rates you badly, you can copy the convo and report him to support (assuming this is SM or somewhere similar). Both verbal/writing is just as good as recording it and you can screen shot the chat window if you need further proof for the support staff to remove negative ratings or comments.
2) Guy does a charge back. Guess what? Hard to prevent if the claim is credit card fraud. The show taking place doesn't actually protect you from the charge back itself. Charge backs aren't generally because you didn't claim a service, but because a card owner claims it wasn't them who got the show. Unless you happened to get him to hold up his legal ID on c2c, that one is unlikely to work.
Yup, it sucks. I agree.
