Soups are always good if you want easy, especially considering they normally don't require a TON of babysitting and they're easy to make a ton of. crockpot recipes are also your friend, as you can just plop everything in the cooker, go about your day, and have an awesome dinner ready when the evening rolls around. Here are 5 super easy recipes I've tried and enjoyed. I'll add notes to every recipe with any changes I've made to better it.
German sausage and Barley soup: http://www.oliviascuisine.com/german...-graupensuppe/
(I left the bacon in and used sodium free chick broth. Also, you don't need to use a dutch oven, as a large nonstick soup pot works just as well).
Cube steaks with gravy: https://wearychef.com/cube-steak-and-gravy-over-rice/
(Hella easy and always a crowd fav. I add a can of cream of mushroom soup to it for creaminess).
Crock pot chicken tortilla soup: https://www.budgetbytes.com/slow-coo...tortilla-soup/
(add a can of hominy if you want, but otherwise this is amazingly good as is with some lime juice, cheese, and cilantro on top).
Sun dried tomato & sausage pasta: https://www.budgetbytes.com/one-pot-...-tomato-pasta/
(I've used both bow tie and penne before, but the former turned out much better imo. also adding half a red bell pepper in with the broccoli makes is super bomb. it's a 30 minute meal which is nice).
This hella easy ham and cheese Quiche: https://www.allrecipes.com/recipe/24...cheese-quiche/
(I like making a couple of these when I know I'll be working a lot because its so freaking easy and can be eaten cold or hot. Add some fresh ground pepper and a bit of garlic powder to the mix before you bake it. it's an easy recipe to add to (some chopped up mushrooms, sun dried tomatoes, or a large hand full of fresh spinach make bomb additions)).
Enjoy!
