    I have an amazing and quick way to make super juicy delicious chicken! I was never a plain chicken fan because it was always so dry and dull when I've eaten it in the past but this way makes it really good even by itself:
    Heat a large pan to medium hot and when its nice and hot pour some olive oil in there. Pound the chicken breast so that it's an even thickness and season it (I'll put lemon juice and onion powder all over it and maybe some basil or cilantro) and cook it on the pan for 1 minute. Turn it over and turn the heat down to low, cover the pan and cook for 10 minutes. (The recipe I found says DO NOT open the pan to check on it.. just trust that it'll work and leave it alone.) After 10 mins take the pan off heat and leave for another 10 minutes without taking off the lid. And your done! It's the juiciest piece of chicken you'll ever eat.

    I like to make this with a double baked potato (I LOVE making these! they're so easy and look so gourmet). My mom showed me a way too make a potato really fast: wash the potato with water and poke it a bunch of times with a fork, cover with a paper towel and get it wet again, put in microwave for 6 minutes or so and you have a cooked potato! Then I'll make the double baked one from there and put it in the oven for 15 mins or so until its a little crispy. (i'm super impatient especially when it comes to cooking so I always look for the fastest ways to make things lol)

    Oh and I LOVE making rigatoni with olive oil, parmesan cheese and sautéed spinach. It feels really light for being a pasta dish. And I hate spinach when it's dry but sautéing it with some olive oil and onion powder makes it really delicious.

    I have one of those Instant Pot pressure cookers, that thing is a friggin' lifesaver. You can make savory stews that normally take hours to make in 15 minutes. Yogurt, bone broth, braised meat (even from frozen) with the cheapest cuts where the meat falls off the bone, chicken, vegetables in 15 minutes. Seriously, your microwave will become useless. People will freak out when they taste how good your food is when you use this thing and it's so easy! It's also easy to modify most recipes to make them in the Instant Pot.

    It's been a toss up whether to buy a crockpot, or a pressure cooker.
    A friend of mine who is a good cook bought one.
    The only comment she had was that the pressure cooker overcooks carrots, if put in with the meat. And to add potatoes the last 10 minutes, then carrots last 5 minutes.

    I got this for Xmas because I have a hard time cooking and eating and balancing it with my schedule. I have a lot of food anxiety from years of disordered eating, so a pot that I can do almost anything with, by just pushing a few buttons, is amazing. It's a pressure cooker, a slow cooker, a rice steamer, and a yogurt maker. It will also brown and sautee, but I still use my cast iron pans for that because they are the best for browning meat, really. My multi-cooker was about $120 at Sur La Table, and it has absolutely earned its permanent place on my kitchen counter. I am ALWAYS using it for something. If it baked bread, I'd go nuts.

    I made Thyme and porcini-braised lamb shanks with potatoes the other night for me and my mom... It took an hour total: 20 minutes to chop, brown, and sautee, 30 minutes in the pressure cooker, and another ten or so to finish/cool. The first twenty minutes are the only part that involve work, other than simply turning the machine off when you're done. Price wise, I got the lamb on sale (3lbs for $14), and the rest of the ingredients (a giant potato, celery, a red bell pepper, spices, etc) probably added another $5, but this was a special meal for my mom, who lives 1200 miles away. Even so, we both ate, and I have 3 more servings of lamb, so each serving of braised lamb is still only about $4.

    I make a lot of beans. LOTS OF BEANS. In my PC, 2 cups of rinsed beans, an onion chopped into 4-6 wedges, 3-6 garlic cloves, a dried chili pepper (your choice!), 2 tbs butter/oil, six cups of water, about 20-30 minutes in the pot depending on the beans used, and bam, you've got meals for days, and your total cost is like $4-8 if you like the fancy organic heirloom beans (variety is fun sometimes when you eat beans every day).

    I'm in the process of building up some articles so I can start a food/cooking blog for practical people who like good, cheap food, but also don't have time, money, or inclination to fuck around, because this seems to be a serious issue for a lot of folks, and I really feel that being able to prepare a wide variety of foods is key to self-sufficiency.

    Meal Prep. Actual fitness meal prep. Started a program where basically they encourage you to make your food in advance and put it into freezer bags or microwave safe containers, all the servings for each day. I swear I spend so much less time in the kitchen now because i just take that day's container out the fridge, put it in the microwave and boom, lunch or dinner. Its perfect.

    I was going to start a new topic about this, then I remember it already existed.
    I think the Crock Pot has been life saviour for me.
    I don't like pressure cookers, I prefer the slow cookers because, despite the long time needed for cooking, the food keeps all the nutrients and also, there is no rush for me because I either I am out in town, I either work so I don't need the food to be ready fast.
    However, this is amazing! I just put the veggies and the meat and spices in the crock pot before work, set it for 4 or 6 hours to cook and when I take my eating break, I just find my warm healthy food, waiting for me.
    This way I avoid eating unhealthy snacks or ordering burgers/ pizza/ chineese food or whatever sounds yummy and warm. Seriously, who is in the mood to cook ANYTHING after work, or during the work break? Meh...not me.
    LOVEEE the CrockPot!! Especially, is coming the summer and the last thing I want is to stay in the kitchen near the stove...

    Right now, in this moment I have pork stuffed bell peppers in the crock pot, in 4 hours they should be done and I am ready to eat a healthy and delicious dinner (yes, my dinner is at 8 AM hahahaha )!

    Actually, pressure cookers keep more nutrients because they cook food so fast. They can also double as slow cookers so you can have the best of both worlds.

    I'm thinking about getting one of those instapots. They look amazing and I hate hovering in the kitchen...with a passion.

    Right now my food making schedule is down to about twice per week. I make a big baked oatmeal with six servings...this lasts 1 full week for me and a free breakfast day for something different on the 7th day. I like to use the budgetbytes websites for her ideas. Every week I make a different baked oatmeal (funky monkey, oatmeal cookie, brownie, and gingerbread are my favs so far).

    For lunches and dinners, I make a pot of rice (lasts 3-6 servings), a pot of lentils (6 servings), a big pan of roasted veggies (about 3-6 servings), and have my meat of choice (usually a chicken I roast and dice up to put on top of rice bowls, sometimes steak, pork chops, or fish). That's my basic formula for a meal. I don't ever really get tired of it since I can just switch up the spices for an entirely new flavor. Top with sriracha and I'm golden! Hubs likes more traditional salsa, which I make from scratch by roasting as well.

    I throw veggies into the lentil pot too (not the ones I roasted)...peas, potatoes, etc.

    Everything is pretty much from scratch. I'll make cornbread with sausage, cheese, and jalapeños and those are like a meal in and of themselves (usually a breakfast to-go for the hubs). Sometimes I'll make banana pancake batter (banana, egg, milk, sugar, all the normal pancake batter stuff) in the blender and cook up a nice stack. (hubs hates oatmeal, no matter how dessert-like it tastes)

    I try and be pretty healthy. I save up all the bones and make a broth with it and use that to cook my rice and lentils with leftover veggie scraps.

    I cook my bone broth until I can squeeze the bones and they disintegrate between my fingers. After using a sieve to separate the bone broth and the bones, I'll throw the bones into the blender and dehydrate them into dog treats...the dog goes insane for them!

    I spend maybe 10-15 minutes on prepping everything and while everything cooks, maybe check on it about every 15-20 minutes or so. Everything is usually done in an hour and the kitchen is only used for the microwave and fridge the next 3 days.

    I don't hold myself to these dishes for every single meal. sometimes I'll be browsing pinterest and see something interesting. I ended up making some cauliflower rice (super easy in the blender if you chop into florets and throw in the blender jar with water, pulsing until the cauliflower looks like rice, then drain in a colander) with some eggs over easy for breakfast today...was craving something savory rather than sweet this AM (a rarity for me). I riced the entire cauliflower head in the blender so I have a lot leftover to use as rice in my rice bowls for the next couple days.

    Also have some zucchini I made into zoodles that I'm still trying to figure out what recipe to use for...got a little overzealous with my new spiralizer.

    I keep sliced frozen bananas and frozen mixed berries in the freezer for a smoothie to fill me up if I want something sweet. And then I also buy big containers of peanuts, coconut chips, and raisins and turn them into trail mix in case nothing else seems very appetizing.

    I spend about $20-30/grocery trip on food to feed me, the hubs, and the pooch (he's a raw food doggie and the butcher gives me about 5 kilos of meat and innards for $2 [lasts about 9-10 days]). Grocery trips only happen when the pooch is out of food.

    The problem is not shipping it from America to Europe the issue is that most US electronics are only 110Volts. If I plug it in here our 220 volts will blow out the electrics in about .003 seconds.

    Finally got off my ass and made a decent amount of home cooked food and bought a ton of fruit etc for the house...I feel so so much better already. I was getting so tired when I lived off sandwiches and coffee, so glad I have some proper food about again. I just really need to not be lazy about cooking.

    I don't know if anyone else has mentioned this yet because it is a huge thread but 'foil packs' are my go-to these days.

    Easy to prep ahead and easy to throw into my convection oven to reheat.

    They have really been helping me with the healthy living thing when I am too lazy to do much more the heat something up.

    I do not like to cook myself, so all the recipes I do are really simple/do not require much effort.

    I am a vegetarian, but just adjust it how you want it.

    I make a lot of healthy tortilla wraps with TVP, whatever veggies I have on hand. Add some salsa or hummus for an extra kick. I will make a few of these, stuff a toothpick in them to keep everything together and store in the fridge. Easy to just grab one when I am hungry.

    Rice with veggies and beans is simple to cook so I will cook this ahead and store it in the fridge. A lot of soups freeze well so are a good option to make ahead so you have a lot on hand that you can just defrost.

    I also make a lot of green smoothies. They are filling and healthy.

    I find it saves a lot of time in the long run to meal prep for a couple hours a day the first couple days of the week. I do this and then only have to grab the containers from the fridge when I am hungry the rest of the week.

    If you like pasta, buy the fresh version from your local store...it cooks in like 5 mins, as opposed to longer. Its been such a time saver when I've wanted pasta but not wanted to order takeout.

    Amazing recipe ideas here - I had to bookmark, thank you!

    I adore cooking; I would cook for my bf friends an family all day everyday I could - would love to do a blog but it's awfully time-consuming!

    I love salads and soups during the week. As has already been said, I think bulk cooking is the way to go; things you can reheat and get down you without resorting to stuff like crisps.

    As for camming, I actually do intermittent fasting, as I find I am much more focused and driven when fasted. It's the only way I can stay slim, and retain muscle. But the thing is, that's my eating personality..I have a big appetite and when I eat, I like to eat big. If you're anything like me, it might be worth a try. I suggest checking out Sara Solomon, if it's something you might be interested in or pm me if you want to ask anything I wouldn't recommend it for those of you who like grazing. It just suits me as I am a cider and pizza, country walks followed by pubs and huge burgers at the weekend, kind of girl. xx

    Wow I had no idea this thread existed and I thought I had read this forum from top to bottom over the past 4 years I was intermittently lurking lol. Always new things to learn. I intend to bookmark this thread too and utilise some of it's amazing knowledge I normally eat like a horse before getting on cam and make myself feel lethargic or I don't eat until I finish cam, tummy rumbling all through privates and then I just order takeout when I am done because I'm starving. Neither is good for me and I need more balance in my time management, boyfriend is vegan so there are loads of ideas in here for him too, which I can incorporate into my carnivore diet. I'm so jealous of all his healthy snacks he has during the day but I just can't join the vegan revolution no matter how hard I try

    This thread just became my bible over the next few days, thanks girlies who contributed to it.

    The other day my friend was over to make real tacos at my house and she used a pressure cooker to cook the cows tongue. OMG it was so amazing! Hers wasnt like the ones here. She still had to use the stove it just had a fancy lid on it to build up the pressure. She also did chicken but the beef was way better! So she and I are going to go to the city to find me a pressure cooker now but Im honestly thinking to myself. I wonder what it would cost to just have her cook for me and my husband 5 days a week! She has a family of 5 and cooks amazing stuff for them so perhaps she could just cook more!

    I only eat twice a day, breakfast at 3 or 4 and then dinner and my husband only eats dinner so this would mean we could have fresh amazing meals everyday and she could make the some extra cash. Do any of you out there have personal chefs?

    That's a great idea. I've used personal chef type companies several times before.
    I would order my food for the week, and the company would drop it off daily to my home.
    When I striptripped, I used a company that prepared my food for a week, and I would go pick it up at their local kitchen.
    Heaven I tell you! Pure heaven.
    I've never been interested in cooking, personally, and have usually been too busy to mess with it.
    If You friend will do it, I say, why not? Go for it. Lucky girl.
