    Hey gals! With summer approaching I've been trying to get myself to eat healthier in order to stay looking fit. I'll be the first to admit I hate working out, so it usually maintain my weight with watching calories. I do love my alcohol though, ugh! Anyways, here's a few things I've been making lately that taste phenomenal and are low in cals! I'll be working on a blog in the future. These are not all super 'healthy' meals I will admit, because of some of the sodium content, and are not preservative free, so just keep in mind.

    first, I always always always replace sour cream with Greek yogurt
    Mix a half packed of ranch dressing seasoning (like the hidden valley kind) with a container of plain Greek yogurt. Dip veggies in.

    I use cauliflower in lieu of potatoes for a twice baked casserole. Roughly chop up a head of cauliflower, and steam until soft. Mash with a potato masher and add about a cup of cheddar cheese, a couple pieces of laughing cow cheese and some green onions. A few slices of cooked turkey bacon if you wish. Spread into a greased casserole dish and sprinkle a tiny more cheese on top. Bake 350 for about 30 minutes.

    cauliflower fried rice: chop a head of cauliflower and either grate it with a cheese grater or pulse in a food processor until it forms rice-like grains. Add sesame oil to a pan and some sliced yellow onions until softened. I then add a half bag of frozen peas and carrots and finally the 'rice grains.' Turn up heat to high until the grains are crispy on the outside. Add some lite soy sauce and a protein if you wish!

    Ooooo forgot turkey pot pie muffins! These are sooooo good and portable!

    I buy the roasted turkeys from Safeway and am able to use the meat for several meals since the turkey breasts are so huge. For the muffins, take a few cups of the breast and chop it up. Mix in a bowl with half a can of condensed cream of chicke soup. Add 1/4 cup sharp cheddar cheese and some frozen peas/carrots. Buy one of the cans of premade biscuit doughs that have like 8 biscuits in each. Grease a muffin tin and use half of each biscuit dough as the crust of your muffin, pressing it slightly up the sides. Use the mixture to fill each muffin about 2/3 of the way too the top. Bake at 350 for about 15-20 minutes. These freeze well too!

    You can use some more of the roasted turkey and shred it to make turkey enchilada casseroles. I use about 2 cups of the turkey and add it to some yellow onions in a sautee pan. Season with cumin and chili powder and cook until soft. Use this as the base of your casserole, spreading into a greased casserole pan. Add a layer of red enchilada sauce and then a thin layer of cheese. Add a layer of green onions, olives, whatever and finish with another layer of sauce. Bake in the oven at 350 until cheese is melted. Top with Greek yogurt. Sooooo good!

    I love this thread.

    For breakfast lately, I have been making a toasted english muffin with butter, an over-hard egg, with red pepper slices, avocado and greek-yogurt cream cheese. It's around 280 calories and fills me up until snack time (I eat 6 small meals per day). It's effing delicious, too. So savory and mmmm. Ugh. I can't wait until breakfast now, lol. Add some black coffee and a gallon of water and I am in heaven.

    Oh, just FYI, sodium isn't that bad for you unless you have a heart condition or high blood pressure. Otherwise, high levels of sodium aren't going to hurt you, really. Sources:

    You should try the Evol brand breakfast sandwiches..egg white w/kale/goat cheese on flat bread. It doesn't sound great, but tastes amazing. Oatmeal, rasin/date/almond mixed w/plain
    I've been eating: shelled walnuts, pistacheos, fruit apples, blueberries, lots of citrus including grapefruit & oranges.
    Brown rice w/avacado
    salads, soups

    I just discovered how fucking DELIECIOUS Franks Wing Sauce is on salad as a dressing! Zero calories. It has a lot of sodium but I drink extra water to make up for it. I've cut out so many calories by using this as salad dressing (and I haaaaate salads without dressing, I never thought I'd be able to find a substitute I'd like).

    Thanks for all the replies everyone! Yes to franks hot sauce!! I make a salad with chicken that I dip in franks hot sauce, then take fiber one cereal (gross by itself) but season the hell out of it after I crush it up. Then I bake the tenders in the oven. I like to use the bolthouse salad dressings. They're about 45 calories for 2 tablespoons and I personally think they taste amazing!

    Unfortunately I haven't had any time to work on my blog. Been dealing with some depression issues and also working late night shifts but hopefully will be back at it within the next few weeks. And yes please on the pastry ideas!

    Ooh, I forgot about salsa on salad. Today I had a huge salad with a bunch of vegetables and chicken with Salsa + Wing Sauce. The entire salad was only 200 calories and it completely filled me up.

    Yeah, it's hard to eat right when you work late nights. I used to always pass out after working so I always woke up starving and would just get Mexican food from next door as soon as I woke up. It didn't make me gain weight but I wasn't losing weight either because I was just eating one very high calorie meal a day. I'm glad I got out of that habit.

    Pro-tip for women who eat low-cal a lot AND diet a lot (like strippers) put leeks in your soup and salads. It will give you the iron you badly need and leeks are usually pretty cheap for how much food value you can get out of the plant.

    Any good recipes for veggies. I REALLY need ideas on eating my vegetables that's easy and simple. Like a side dish or just sauté

    ^^ Damn it, I wrote out directions for the spinach and apple and when I went to insert the photo it ate my instructions. Sautee 4 cloves of chopped garlic and a shallot in olive oil. When aromatic, add the apple, salt and pepper to taste. When the apple is soft, turn off the heat and wilt the spinach in the remaining pan heat. Stir to combine. Best side dish ever.

    I eat strawberries with Organic Rose Petal Preserve every morning. This is under 200 calories and makes a great light breakfast Plus strawberries taste divine in rose petal preserve.
