Leeks are wondermousa staple of Polish cooking. Separate the white parts of the leaves from the green (this seems to be more of an American preference, as my Polish relatives will use the whole thing) & cook them in a nice vegetable stew, or include them in chicken soup in lieu of celery.

I love roasted broccoli with Irish butter and sea salt.
Cauliflower is so versatile too. I put it in a blender and make low-carb "mashed potatoes" with garlic and butter sometimes. Or I just steam some and add parm/romano cheese and butter.
Brussel sprouts in a pan with kosher salt and butter. You just let it set till the butter browns on it. Delicious.
Broccolini <3 just roasted with salt.
Roasted whole pods of okra.
Steamed edamame with soy sauce and fresh garlic.
Kale/spinach salads with feta cheese and raspberry vinaigrette.
Stuffed bell peppers--cheese and breakfast sausage is good. My boyfriend also does cream cheese and bacon bell peppers when he grills jalapeno poppers for himself (too spicy for me).
Basically my veggies are tasty carriers for butter, salt, and other yummy additions.





Baby spinach...I consume about a handful raw every day in whatever smoothie I make that day. Mornings I tend to just throw anything and everything in a blender, definitely aids my digestions.
I LOVE Iceberg lettuce (I know everyone says no nutrition blah blah) but I love it...I eat it raw as well as a snack.
Celery sticks and humus is one of my favourite snacks ever.

Lately, I'm addicted to eating kale raw(it gives me an energy boost!). Try my creation. I make my raw kale salad with shredded carrots and pumpkin seeds. @SimoneGray--my boyfriend is infuriating because he doesn't do recipes/measurements, and he's the one who makes these. From what I saw, he basically just sliced the bell peppers in half and filled them with full fat cream cheese and wrapped bacon around them, then threw them on the grill wrapped in foil till the bacon cooked. I was skeptical, but I ended up liking it a lot. It was like a less spicy jalapeno popper.

Squash is a good filler for dishes that usually require a lot of meat pieces (like stir fries)





Broccoli steamed or broiled
Artichokes, steamed or pickled
Kale - still getting used to, usually I buy 'chips'
Brussel Sprouts, steamed or prefer broiled
Wheatgrass juice

I've been using kale with my new blender(™). I also add stuff like carrots, spinach, and avocado. Cucumbers are good too and I read somewhere the rind is good for your skin.
Oh I do that with kale too but I also bake it with olive oil. Edit to rephrase that I didn't know kale chips was a thing until I saw others say they get kale chips. I buy the leaves, mix them in olive oil, put sea salt and I've found garlic powde is good on it too. I bake the leaves that way and they remind of crispy but turn out really good. I'll have to look up what kale chips are.
I like all kinds of veggies. My favorite places to go.l out to eat are places with good salad bars. I try to avoid chain restaurants but I do have an addiction to Ruby Tuesday and I'll go there just to order the salad bar and eat those really good mini biscuits.
I don't make everything the most healthy lol I like broccoli but I boil it with cheese, I also do it with spinach and collard greens.
I like all bell peppers, especially the Orange ones. I'll get all the colors of bell peppers and do a sstir fry with those and onions as sides to meals I make.

Broccoli and asparagus are my two lovers. I like my broccoli steamed and asparagus grilled. I put olive oil on my asparagus and top it off with lemons, mmm! my favorite lettuce to put in my salad is kale




I came in thinking it was about money, and got confused. I looked at the forum this was in. "Body Business" oh...
I don't like salad, but I'll stick around to see what you girls come up with because I need more veggies in my diet anyway.
I buy organic greens in powder form at the health food store, easier way to get your greens
I hate green vegetables. Hate them with a fiery passion and I'm convinced they are the devil's creation.
That said, they do make me feel better and my skin look nicer, so I choke them down.
I do the coward's way, green smoothies.
I use half water, half sugar free, low cal apple juice or cranberry juice to make it sweet, then throw in a cup of of greens. One day I'll do kale and arugula, the next spinach and chard. If I have other veggies on hand, like carrots, cucumbers, or broccoli, I'll throw that in too. I chug it all down and go on my way.
I usually have one or two a day in addition to my normal meals (not as a weight-loss meal replacement), and it has done wonders for my energy and skin.

Oh and fresh arugula tossed with a little lemon juice and olive oil, topped with fresh Parmesan shavings, sea salt and ground black pepper





Boston lettuce, tastes like butter. I just had a salad with it. Topped with red onion, beets, lentils, white beans, pickled red cabbage and cucumber. With a vinegrett. Was delicious and filling.
Boston lettuce makes perfect wraps too.

You know, I met a guy that was selling/giving samples of some greens [email protected] Whole Foods..when he told me his age, I about fell over..he looked 20 yrs younger than his age!
I am going to start w/this..I just dont get hardly any veggies.
That said, I do love asparagus & avacadoes too!
