In the US? If so, a contract contemplating any illegal activity is automatically unenforceable, since the law upon which it is based prohibits that activity. For legal activities, contracts are commonly used as a way to limit the liability of the distributor or agent.

Standing in front of a judge or waiting to get released as they hold you is already a loss. Written contracts for what may be an illegal activity is a gamble. Add to that you have people drafting those contracts who may not understand the law in the state and how to dance on the pin required for such an illegal contract. Add to that there are federal laws that might be breached as the feds have widened their reach to get sex workers and a contract might just open up that can of worms.
Until sex workers are given their most basic rights to contract, advertise, operate a normal business, call police for help, use civil courts, etc., I unfortunately have to say that all of these activities come with risk. It's exactly that type of legal and voluntary activity that the moralists are trying to deny sex workers.
Besides model release forms what kind of contracts are you referring to?
I'm sure there are instances where sugar babies / sugar daddies / escorts / mistresses have had to enforce agreements (verbal or written) formally in court. Examples that come to mind are Anna Nicole, Stephon Mayberrys mistress, v stiviano and her sugar daddy, and recently someone post here about a stripper getting awarded a good portion of one of her clients estate and the family trying to fight her for it.
It probably depends on the case and the jurisdiction. You'd have to ask a lawyer who is familiar with adult industry laws where you're located.
