    Honestly I don't like vegetables that aren't covered in cheese or ranch that much. I'm also not ignorant in the fact that if you can adapt your taste buds. So please help with some tricks and recipes. Honestly I haven't even tried a lot of different veggies but I'm trying to set a better example for the kid.

    you can eat fermented veggies such as kimchi, sauerkraut, pickles(look for those which has no sugar in them), fermented kale.
    lettuce is very handy such as butter lettuce it is creamy and yummy easy to digest i eat it with everything i buy it at costco.
    You can make ranch alike dressing but healthy just google it.
    ideas.
    stuffed bell peppers(veggies stuffing or any grounded meat)
    spinach can be eaten alone or you can saute on coconut oil and drop eggs(omelet or just an egg) in there.
    cabbage can be stuffed same as bell peppers.
    steamed, roasted, boiled string beans which you can buy frozen.

    Sneak it into other foods. Spinach and mushrooms are easy to throw in with eggs or on top of chicken. Smoothies with mostly fruits but add kale. You can throw a lot of stuff into soups or stews, like bell peppers and onions.

    Yes, spinach spinach spinach!!! You can put it on/in almost anything. And use it as a substitute for iceberg lettuce. Iceberg lettuce doesn't have much nutrition. Also, low sodium vegetable soups are great and they fill you up.

    I have been trying to eat more cooked spinach lately (I love raw spinach but I haaaaaaate it cooked, but I know it's better for you!!) so what I've been doing is sauteeing a bunch in a pan with garlic, olive oil, salt, pepper, fresh basil or basically whatever herbs and spices I have on hand and then transferring it to a blender and blending it with a bit of avocado - then I use it as a pasta sauce. For me this has worked cause I hate the texture of cooked spinach but once its blended up into a sauce, it doesn't bother me so much!

    ^^^I hate spinach in every way but if I chop it up pretty fine and cook it up in butter with other veggies I feel like it hides very well in an omelet. And it really fucking shrinks when it cooks down.

    See I like spinach cooked or raw. For some reason I have a problem with avocado. I'm not 100% sure why. I'm trying to get use to guacamole over sour cream or mayo but I think I just haven't had it made right.

    If you're by a Whole Foods, they have a delish avacado/artichoke dip, & it seems healthy too. Sometimes they sample it in store. They make it there.

    Get a vitamix and blend frozen fruits and veggies ... drink it down quickly and you've at least had a days serving or more.
    I feel like you can always find a way to mix certain veggies into stuff, or season them to they're actually pretty enjoyable xo

    If you want to get an extraordinary amount of the highest quality vitamins in you which haven't even been masticated, but triturated, then treat your life to an Angel Juicer; a far cry from the centrifugal juicers designed for fun & convenience rather than hardcore nutrition. Some days I ONLY juice and it's so bio available - no hunger.

    Drink your veggies!

    If you go to any whole food store they have fresh premade vegetable juice concoctions that are surprisingly tasty. You can drink vegetable juices and vegetable smoothies. Either way, Blending vegetables with fruits can make them more palatable.

    I loathed vegetables growing up as well. keep an open mind and willing to try many different varieties of vegetables. And what you didn't like at 9 may be surprisingly good to you as an older adult.

    also play around with size and texture.

    For example When you chop spinach and put it on tacos it tastes just like lettuce. So to me chopped spinach doesn't have as strong of an taste as the whole leaf. And raw crisp spinach tastes better than cooked soggy spinach to me. I went to a restaurant that had crispy fried spinach that surprisingly taste so good.

    Most people like pasta sauce. I believe you can get a full serving of vegetables from your next spaghetti dish.

    If all else fails pick up a quality supplement from local whole food store or vitamin shop to make sure you get your nutrients.

    I just want to say that once you hit like 27+, you'll start to love veggies just based off how much energy and clarity they give you when you eat them. It's good to sneak them into things if you you don't them on their own. I don't even think I know many people who do like them on their own

    Good dishes that downplay veggies- curries, chili (with broccoli) stir fries & "hot dish" (this is a bizarre style of Midwestern casserole that I have a hard time explaining to people.)

    This isn't a recipe, but one thing I found to force myself to eat more veggies (and realize how bad I was about it sometimes) - I have a phone app called gympact. You can set weekly pacts to do multiple things, but one is to eat fruits and veggies. You can set your own weekly goal, and for every one missing from your goal at the end of the week, they take $5 from you. So it's a big incentive to get them in! For awhile, I had my weekly veggie/fruit goal at 7, so that I was in the mindset of having at least one full serving a day to add to the pact. It actually helped a lot, especially if I thought about it at the end of the day and realized I hadn't eaten a single healthy thing worth points toward my pact all day.

    I eat the fuck out of veggies, it's helped me look younger and gives me the energy to work 40+ hours on my feet at my day job and dance a few days a week. I have a vitamix and love green smoothies, throw in a bunch of spinach or kale with strong tasting fruit like mango or berries and you won't even taste the greens. Just don't go too crazy with the fruit or it'll spike your blood sugar in an unhealthy way. I also make fresh salsa and put it on everything. Stuffed peppers, stuffed mushrooms, also roasting with olive oil or sautéed with lots of seasoning. Baked sweet potatoes with a little honey ... I can go on and on. What really makes a big difference is buying good produce. I get mine super fresh from a local farmer's market and the flavor is so much better than from the grocery store. Conventional tomatoes are garbage compared to good vine ripened ones.
