    Default Cabbage Soup

    Hey Everyone!!! Im looking for a recipe for cabbage soup. I think somebody posted it in a thread about a cleanse, but I searched and couldnt find it. My mom used to use this soup in a fad diet, years ago. I just want something hot that wont pack on the pounds. Does anyone know what im talking about? ???

    I know what you're talking about, I heard about it in jr. high... I HEARD that it works... uh... did you try googling it? Most soups don't pack on pounds anyway. If that's all you're really looking for, you could head to the grocery store.

    I tried to make some last week with cabbage....kind of turned out gross. I was trying to make it low sodium and lots of vegetables....put in cabbage, broccoli, cauliflower and green beans. It was bland....I threw the whole pot out.

    Russian Cabbage Soup (serves 4-6)

    1 Turnip (peeled and diced small) [peel it otherwise it will taste unpleasently bitter and ruin the soup]

    1 large onion (diced small)

    2 carrots (small) [peeled, cut into half moon shape or small diced]

    2 celery sticks (small dice or half moon)

    2 tart green apples (Peeled Cored and Diced) [I suggest granny smith]

    About a 1 pound cabbage (core and shred it as you would for coleslaw)

    5 cups(40 oz) of Stock(Beef, Chicken, or Veg) or Water [Make sure stock is sodium free / unseasoned]

    Butter

    2 Bay Leaves

    Sprig of Thyme

    Sprig of Parsely

    1 Tbs Finely Chopped Dill (fresh) [if using dried dill reduce amount to 1 teaspoon]

    2 tsp lemon juice.

    Salt and Pepper to taste [Add just enough salt at end of cooking to give food flavor] (I suggest meduim grain Kosher salt since it dissolves quickly and leaves the cleanest flavor)

    Get pot large enough to hold ingredients, melt butter, and saute carrots, turnips, onion, and celery. Until opaque.

    Add cabbage, green apples, stock and bay leaves, thyme, and parsely.

    Bring to boil and simmer 40 minutes until vegtables are tender.

    At end of cooking proccess add lemon juice, season to taste with salt and pepper, then add finely chopped dill.

    Garnish with Sour Cream and more finely chopped fresh herbs/ dill.

    Soup is ususally accompainied by sour cream and Dark Rye or Pumpernickel.

    Variations: A diced peeled wax potatoe may be added to soup. Bacon fat may be used instead of butter, just saute the chopped up bacon, and add vegtables when there is enough fat in the pot to insure a good saute of vegtables.

    Use common sense when making the soup. This recipe is approximate and not verbatim on amount of ingredent's only an estimate. Trust your eyes for making adjustments.

    Cabbage loses most of its flavor when cooked, so the taste experience has to come from other things added. Like potatoes. Leek, onion, garlic, chilli, and pepper add back flavor and don't add salt to the concoction. Don't forget to add things to vary the consistency of textures.

    When I was a poor starving grad student, I used to make a mean crock pot stew with cheap meats like turkey wings and whatever veggies were on sale and cheap potatoes. Throw in some rice or noodles when you reheat it and its is filling and wholesome.

    FYI

    Food will always be bland, if you don't use salt. Salt is what gives food flavor. If you season food with Kosher salt, that will give it the best flavor.

    The salt that is considered bad for you is called "popcorn salt" it found mainly junk, and processed foods such as: popcorn, potatoe, chips, cheeze wiz, sodas, etc.

    The reason it's so bad is that the salt is ground down to 6 microns to where your tounge can barely taste it. This causes us to never satisfy our salt craving, while taking in more salt than our body needs. As a result of this intake our body needs to drink more water to balance out the loss of fluid caused by the over abundance of salt in our system.

    An example of this is the movie theaters, look at all the food products they sell, notice how many all contained processed salt as well as the cost. i.e. Popcorn, and Sodas. This is also why bars always have salty foods availble for free, or low cost. The dehydration causes the customers to drink more.

    If you Season your food to taste with regular salt, your generally getting enough to satisfy your bodys craving for salt anyways.

    The low sodium people always tend to forget that fact about salt when they're advocating. What I find real funny is that the salt substitutes they advocate do the same things to you as salt does, the only difference between them and salt. Is that salt tastes better.

    I remember eating lots of boiled cabbage with cornbread as a kid. Just wash, core and 'chunk' a large cabbage head. (By chunk I mean break the leaves into large peices.) Put it in a large stock pot with water, add a couple bacon strips or a ham hock, salt and pepper to taste, and boil for 40 minutes or so, until cabbage is tender - if using a ham hock, also until whatever meat on the bone is falling off. While that's boiling, mix up a batch of cornbread and bake it. To serve, crumble a piece of cornbread on the plate and ladel cabbage and juice over it.

    Probably not the most PC meal in town, but I sure liked it. It's a southern thing....

    Yea that is a southern thing.... i love some greens and neck bone,cabbage,ham hock in everything,corn bread...lol just cant do chitterlings. but yes i love cabbage, i usually make mine with tons of vinegar and some salt,and like u said, some ham hock.
    my friends up north cant believe it. lol

    Cabbage soup is really big with Polish/Slovak folks (i'm both) too. I didn't realize it was common down south. Learn something new everyday!

    It has the recipe along with the program (for 1 week) to follow on the diet. I have done it, and my aunt's both did it. We both lost about 10 lbs, but was all water weight.

    YUCK!! lol sorry...cabbage soup? i dont think aussies eat alot of cabbage. its not even that nutritious....spinich is better for you.

    i always fry bacon or fatback, put cabbage and a little onion in there, cover it with water, add a lil salt, alot of pepper, and let it simmer till the cabbage is the softness i want it to be at. the meat adds alot of flavor...but i guess if your looking to eat cabbage soup for a diet, you might not want to use my recipe, even though it sure is good!!!

    Caldo - a Mexican soup

    1 lb of lean stew meat - brown it in a tiny bit of oil
    1 can of rotel tomatoes
    3-4 stalks of celery chopped
    1 onion chopped
    2 cloves of garlic chopped
    3 potatoes cubed
    a sprinkle of oregano (sorry, I don't measure)
    Add salt, pepper, cumin and chili powder to taste

    Cook all the above ingredients for several hours (I like to put it in the crockpot in the morning).

    Add one head of chopped cabbage about an hour before you want to eat it.

    I serve this with cornbread in the winter - very warming, filling and pretty darn nutritious!

    Oops - forgot to add water to the Caldo! Add enough water to cover everything in the pot. You may have to add more when you put in the cabbage. Also, if you put everything in the crockpot early - you may want to add the potatoes later because they tend to disintegrate completely if you cook them too long.

    just to warn you, cabbage tends to cause a lot of unpleasent, well, gas.

    if you're looking for something healthy and warm that is cleansing try the "master cleanser" lemonade. it's warm water, a little grade b maple syrup, lemon juice and cayenne pepper. it's tasty and very good for you. you can do a whole master cleanser diet, but i find it makes me sick (way too few calories and no protein). here's a website... http://www.falconblanco.com/health/c...moncleanse.htm

    chicken broth is also a good option for something warm and light.

    or homemade vegetable soups made from fresh vegetables.

    cabbage can also "cleanse" you in more ways than one. If you really dont have cabbage in your diet, plan on spending a bit of time in the bathroom.
