In a club I carry my big notes in my wallet in my pocket and a medium sized fold of $1s and a couple of $5s in the middle in the palm of my hand as I move around. When I approach the stage I usually fold a $1 lengthwise and rest it on my arm for the dancers to see.
I have seen other customers leave their money fold openly on the table in front of them or in an uneven stack.
I am hesitant due to personal security issues of flashing any sort of money roll around openly, but realize that dancers see everything in a club. They are constantly studing every customer, where the other dancers are, analyzing every detail around them.
If I display cash, then I am considered a serious customer. If I tip the bartender or the DJ a couple of times, I know I am being watched the whole time.
I tried the open money on the table thing and was approached more times than usual for table dances.

The waitress, if there is one, is often harder to track down than a dancer. They have their appeal though, and can be quite friendly at times. There is an upscale club in my area, but it's even worse (you need road flares and a copy of your 401k to get a dancer out of the dressing room), so I've only visited there twice. Also; to be fair, being shy (and probably having a frown on my face) doesn't exactly send them running to my table either, since I can be a difficult customer to try and start a conversation with, not that they try but once in fifty or so.
