    Default Pea and Ginger Soup!

    This is one of the the BEST soups I've made for myself! I found a recipe and totally twisted it and the result was absolutely fabulous! Optionally, it has no dairy in it, so you vegans out there can give it a shot...

    Ingredients:
    2-3 cups of green peas
    1/2 large onion finely chopped
    1 large garlic clove (or 2 small ones), finely chopped
    1tbs olive oil
    (1 tbs butter optional)
    1.5 pint veggie stock
    5-10g root ginger, finely chopped
    1 tsp apple cider vinegar
    salt and pepper to taste

    Fry onion, ginger and garlic in olive oil in a big pan (or pot might be better).
    Add peas and stir for about 3 minutes (optional: you can add butter here).
    Add stock and bring to boil
    Use hand blender to liquidise
    Add salt and/or pepper to taste and eat it hot (yummers!)

    Sadly, silly me used a traditional blender and didn't press the lid down tight enough. Now I am sitting here with half a stinging red face waiting for the bloody swelling to go away. But at least I have my yummy soup to keep me happy!


    And remember, soup is a great appetite suppressor and meal, especially if you're on a diet!!!

    Emily, weigh the ginger root after it has been peeled if you have a kitchen food weigher (it's not ginger powder, so you needn't worry about tsp or tbs measurements). Use less to get a more subtle taste. 5-10g is a very rough estimation, but I love ginger and like it relatively strong in most of my ginger-based cooking so I use quite a bit.

    I don't have a scale, but I do have fresh ginger root (I actually have all the ngredients), but I have no idea how much volume 5-10 grams is

    Maybe try it with 1 - 1 & 1/2 tablesspoons finely chopped. I don't think it's too much as you may want to try it with a smaller amount at first so you don't overpower your senses with it when it's cooked (that stuff is so potent!).
