    Home Run Spinach Lasagna
    This recipe involves a great deal of manual labor. Taking shortcuts will dramatically reduce your chances of getting a home run. Remember…third base is not winning.
    Throughout entire cooking experience, it is best to continuously consume glasses of merlot. It worked for Julia Child.

    1 Big ass bottle of decent merlot
    2 bags of spinach
    1 container ricotta
    2 eggs
    1 box of lasagna noodles
    1 box of large mushrooms
    1 can sliced black olives
    1 Jar of your favorite spaghetti sauce
    1 loaf of Italian bread
    1 block of mozzarella
    Shredded Parmesan
    Butter
    Minced garlic

    Lasagna Noodle Prep
    1. Boil water and cook the noodles with about a tablespoon of olive oil.
    2. Continue with the stuff below until noodles are done.
    3. Once noodles are done, remove from pan and rinse in cold water.

    Spinach Prep:
    4. Pick all of the stems off the spinach leaves.
    5. Rinse it…a LOT…nothing kills the mood like biting into a piece of sand.
    6. With the spinach still wet, place spinach into a pan with a lid and put on the stove. Stir it periodically. Steam it until is all nice and soft.
    (You can also achieve this by placing the spinach in a covered bowl in the microwave.)

    Ricotta Prep:
    7. Slice however many mushrooms you want and sauté in butter.
    8. Shred the mozzarella. If you're doing this by hand, try to avoid including chunks of skin from your knuckles.
    9. In a large bowl mix the following with a spoon or fork
    a. Ricotta
    b. 2 eggs (do not include the shells)
    c. Can of olives
    d. ¾ of the mozzarella
    e. spinach
    f. half a cup of parmesan

    Lasagna Construction
    10. Using a rectangular pan, begin by placing a layer of sauce on the bottom.
    11. Lay down a layer of noodles.
    12. Spread on a layer of the ricotta mix
    13. Continue placing layers of noodles and ricotta until the pan is full, or you are out of noodles.

    I will share my favorite Cream Cake:

    Old Fashioned Cream Cake

    1 Yellow Cake Mix
    1 Egg
    1 Stick Margarine

    Press into 13x9 pan

    Beat:
    2 Eggs
    1 8oz. Pkg. Cream Cheese
    1 Box 10x Powdered Sugar

    Pour over crust
    Bake 35-40 minutes @350 degrees
    Top will be light golden brown

    The BEST Chocolate Cake Ever!!
    (Great for entertaining or special occasions. WAY too rich to eat alone!)

    5 oz unsweeted chocolate
    1 3/4 c hot coffee
    1/4 bourbon (anything you like works though)
    8 oz butter
    2 c sugar
    2 c all-purpose flour
    1 tsp baking soda
    pinch salt
    2 eggs, room temp
    1 tsp vanilla extract

    Preheat oven to 275 degrees F. Grease and flour 2 8inch or 9inch pans(to ensure the cakes come out, line the bottom of the pan with parchment). Sift together flour, baking soda and salt.
    Combine coffee, bourbon, chocolate and butter in large bowl. Let stand until completely melted, then whisk together. Wisk in sugar and cool. Whisk in the flour mixture in two batches, then add the eggs and the vanilla.
    Pour the batter into the prepared pans and bake 45 minutes (check after 30) or until a toothpick inserted in the center comes out clean. Cool the cakes on wire racks.
    Serves 16 - 20.

    My fav recipe is Taco Cassarole.

    2 lb. ground beef
    1 lb. of shredded cheese
    2 packages of taco seasonings
    1 box of taco shells
    1 jar salsa or picante sauce
    1 16 oz tub of sour cream
    1 small onion choppe
    1 bell pepper chopped
    1 tomato chopped

    Pre heat oven to 325, crunch up taco shells and add to the bottom of the cassarole dish. heat shells up to warm for about 5 min.

    Brown ground beef and follow package directions for mixing seasonings to ground beef.


    Layer cheese on top of warm shells, then add ground beef, another layer of cheese. Then add sour cream, salsa, and another layer of cheese. Top with chopped veggies. Put dish back in oven for 5-10 min to melt cheese and warm the whole dish.

    The absolute best chocolate pie ever!!!!

    P.M.S. pie recipe

    1 Oreo pie shell
    2 small boxes of Jello double fudge instant pudding
    1 8oz. tub of Extra Creamy Cool Whip
    1 Hershey plain chocolate bar
    1 3/4 c. cold milk

    Hershey chocolate sauce if desired

    Add a swirl of chocolate sauce to bottom of pie shell.
    Mix 1 1/2 boxes of pudding to 1 3/4 c of milk, mix well and pour into pie shell.

    Add remaining pudding mix to Cool Whip and mix well.
    Add topping to pie. Shave chocolate bar and add shavings to top of pie, the gently add chocolate sauce swirl to top of finished pie.
    Put in the fridge, and wait at least 1 hour before serving so the pudding will set up.
