    Default Turkey Recepies...

    Anyone have any? I'm roped into making a turkey breast this thursday...

    I cook like a madman but i've never cooked any turkey, or any poultry other than cornish Hens or chicken legs. Any ideas for flavor? Gravy ideas?

    I have This:

    Green Beans
    Turkey Gravy (Jarred)
    A five pound Turkey Breast
    Mashed Potatoes (Instant, unfortunately)
    Stove top turkey stuffing
    Cranberry sauce

    Any ideas? I wanna make it a big feast (for only 2-4 people). My friend just found out he has Non-Hotchkins Lymphoma (Whatever that is, i just know it's bad), and he's not up to driving to centraillia Illinois for family, so i asked him if he wanted to come hang with me on TG, since i don't have anything going on (The kiddo is in Indiana, i'll have him Christmas).

    How do you baste Turkey properly? I know it takes a while, and i only have a day to prepare (A day that i have to work no less).

    I give you props for cooking! I gave that up once I almost burnt my house down....

    But here's a few good recipes, and I am sure others will have many more!


    INGREDIENTS:
    1 (18 pound) whole turkey
    1/2 cup unsalted butter, softened
    salt and freshly ground black pepper to taste
    1 1/2 quarts turkey stock
    8 cups prepared stuffing

    DIRECTIONS:
    Preheat oven to 325 degrees F (165 degrees C). Place rack in the lowest position of the oven.
    Remove the turkey neck and giblets, rinse the turkey, and pat dry with paper towels. Place the turkey, breast side up, on a rack in the roasting pan. Loosely fill the body cavity with stuffing. Rub the skin with the softened butter, and season with salt and pepper. Position an aluminum foil tent over the turkey.
    Place turkey in the oven, and pour 2 cups turkey stock into the bottom of the roasting pan. Baste all over every 30 minutes with the juices on the bottom of the pan. Whenever the drippings evaporate, add stock to moisten them, about 1 to 2 cups at a time. Remove aluminum foil after 2 1/2 hours. Roast until a meat thermometer inserted in the meaty part of the thigh reads 180 degrees F (80 degrees C), about 4 hours.
    Transfer the turkey to a large serving platter, and let it stand for at least 20 to 30 minutes before carving.

    I was thinking, what if i basted it in a mix of Berenger White Zinfindel, butter, and spices... Hmmm...

    I even can borrow a garlic/spice injector (whatever you call it) that a family member bought from Ronco (The folk behind the showtime roticery oven infomercials).

    I'm thinking dervish here... I shall rock. I gots me a mind for cookin'.

    Get a turkey frier. It's the best way to do turkey.

    We're getting a fried turkey as well, since my dad's oven if broken lol!

    I couldn't believe that a fried turkey would taste good. Then part of the clan came over with a propane-fired deep fryer. The turkey for the whole fam damily took 25 minutes and was, no kidding, the best turkey I've ever had. Tender, moist.

    Zeno household:

    Turkey, deep-fried, cholesterol-free peanut oil.
    Mashed potatoes, real ones, with garlic, butter, cheese, sour cream, and a few other things.
    Yams with those candy marshmallows (someone else can have my share).
    Fried corn.
    Green beans with bacon and onion rings.
    Pumpkin pie.
    Pecan pie.

    Mad, all the best to your friend. I hope this gathering can show him the comfort of friends and remove his burdens for the day.

    Gravy!

    I am a serious Thanksgiving purist, having been raised by Southern from-scratch cooks. A few years ago my stepmother was really busy and decided to get one of the side dishes from Luby's--the family was scandalized. My fiance's family's the opposite (them being Yankee career women and al). Last fall they were astonished that I was going to make the cranberry sauce from scratch. "Wow! How do you do that?" "Um, you boil some water and suger and cranberries...." Anyhow. Gravy is easy. Flour, fat, seasonings, liquid.

    But I'm up at the new home right now, where I'll be moving in three weeks, so I don't know if we'll do much tomorrow. If I were to make Thanksgiving dinner it would be:

    Roast turkey (though I've always wanted to try frying)
    Homemade yeast rolls
    Cranberry sauce (this has been my job at family Thanksgivings since I was 12)
    Giblet gravy (Mom's recipe)
    Green beans (cooked with lots of bacon) (and no casserole; I will totally eat it up at other people's homes but I hate to make anything that calls for cream of mushroom soup)
    Granny's cornbread stuffing

    And of course being from Texas you have to have pecan pie, though I really like pumpkin, too. Or sweet potato.

    I will be thinking about this while we're at some restaurant tomorrow .
