    I'm totally salivating...and saving these recipes! *wink*

    One of my favorite recipes is similar to the One Eyed Jacks, but a bit different. I got the idea from Martha Stewart's Every Day food mag.

    Take thickly sliced bread and spoon out a hole big enough for an entire egg (both white and yolk). Lay asparagas or bacon or whatever you want accross the top of the bread/egg, and sprinkle with your favorite cheese and herbs. I prefer meunster and dill (strange combo, I know). Bake at 375 for 15 min.

    Love eggs, especially scrambled with salsa over them. The eggs I use are super fresh though, thoughtfully donated by my neighbors chickens. I have to stay away from the yolks due to a cholesterol problem, but nothing beats a fresh scrambled egg white with a dash of homemade salsa over it.

    And on that note, I am off to make me one.

    I like to make a delicious egg white omlette with mushrooms,tomatoes,fresh mozerella and avacado. Super yummy. I try to use organic eggs whenever possible, they taste so much better to me. I think today I am going to add veggie bacon or this great stuff called Soyrizo to the list of ingredients.

    this is my original egg recipe that i'll share with you egg fanatics.

    heat up a frying pan medium/high.
    while that's heating,
    grab

    2 or 3 large eggs.
    1 tsp. of water. (water makes the eggs fluffy )
    4 tsp parmesan cheese
    1 dash of onion powder

    mix together. (obviously.)

    i make my eggs scrambled and completely cooked.
    once they're done, i'll shut off the heat and melt american cheese on the eggs.

    usually, i'll grab 2 pieces of whole wheat, unbuttered toast and make a sandwich out of it.

    yum.

    smoked salmon - sour cream - scallions - scrambled and cooked together

    feta cheese - spinach - mushroom - scrambled and cooked together

    deviled eggs - I mix mayo ( sorry not a miracle whip fan ) a dash of sugar - white vinegar - celery seed - onion bits - pickle relish - bit of mustard -I use the same mixture for potato salad
