The Firm: Firm for Life by Anne and Cynthia Benson. It came out in the 90's and I still find it extremely motivating to read whenever I don't feel like working out.

    Mel Siff's "Supertraining"
    McArdle's "Exercise Physilogy"

They are both textbooks but once you understand how the body works, you won't need the fad books.

For less heavy stuff, hmmm hard to pick. Unless one needs the heavy scientific explanation, everything one needs can be found online at great resource sites like for exercise descriptions and such, and there are so many sites which good nutrition advice.

For motivation, check out "Psycho Cybernetics" by Maxwell Maltz.

Ultimate Diet 2.0 is cool. I've talked to Lyle(the author) a few times. He's a great guy.
