    Vegetarians & Vegans, Please Post Diets

    I am needing to clean up my diet for a number of reasons, and was wondering if vegetarians/ vegans/ etc. could post some of their daily meal plans & favorite foods.
    Do you have some favorite ways of preparing certain foods to make them more digestable (I hear raw food can cause intestinal discomfort)?
    (PS I'm allergic to soy, so non-soy veggie protein suggestions are greatly valued.)

    I was a vegetarian for 12 years. Raw food is actually REALLY good for you (including clean raw meat), but just because you don't eat meat doesn't mean you have to live on raw bunny food. Here's my favorite quick-dinner - I'm no longer a vegetarian but I still eat this a lot because it's cheap, filling, healthy, and DELICIOUS!

    Eggplant Stew over Baked Potatoes
    Start baking the potatoes.
    Peel and chop one or two carrots. Microwave 1 minute or until softened; set aside.
    Peel and dice one eggplant, one very small onion, and as much fresh garlic as you like.
    Saute all of the above in olive oil until cooked almost through.
    Pour some white wine (maybe 1/2 cup or so) over it all to stop the sizzling. Stir.
    Stir in canned spaghetti sauce until you have a thick stew-like consistency.
    Simmer, covered, for about five minutes.
    Split the potatoes; butter if you like, and cover with stew.

    This is good topped with a little Parmesan cheese but if you're vegan, you can leave out the cheese and butter. It's still delicious. My ex-husband and my boyfriend are both avid meat-eaters but they love this; my bf requests it all the time and my ex called me the day after I left him to ask for the recipe.

    It's really flexible too. You can add whatever else you think would be good in it.

    I am vegan and eat relatively little soy. I recommend a book called "Eat to Live" by Joel Fuhrman (from Amazon) on healthy, vegan weight loss. It's all about packing the most nutrients in per calorie consumed, which results in significant wieght loss. He has tons of recipes and info. And, yes, definitely call PETA for a veg starter kit!

    As stated above, raw foods are best. Broccoli and Spinach have more protein per cal than steak, and more nutrients than almost anything!

    Here's what I do (and since I can't exercise for like a month b/c of new breasts, I'm doing this every day) :

    Once a day (preferably breakfast) have a spinach/apple smoothie -- it tastes good (the apple way overpowers the spinach)! Here's the "recipe":

    -At least a half a pound of spinach (wash it really well unless it's bagged and pre-washed)
    -One apple (or half an apple if it's huge)
    -Splash of soy milk (unsweetened) (for you rice or almond milk) and Splash of Cranberry (just a tiny bit ... the spinach has plenty of water in it already.
    -A little protein powder (this is optional. I use a soy-based called Source of Life granola flavor, but there are soy-free varieties)
    -Ice cubes
    -BLEND (it takes some manuevering) and enjoy! Drink as many of these as you can!

    -----------------------

    This one's easy! Steam (or boil) 8 oz (half bag) of frozen broccoli mixed with a half bag of broccoli, cauliflour, carrot medley). Eat it before dinner or with/after something smaller than usual.

    -----------------------

    Watermelon! It's harder to find now, but when possible, eat unlimited watermelon!

    All of these ... eat as much as you want and you will lose weight, cleanse, get healthy!

    Exercise and make your other meals healthier and healthier! You'll learn to love it!

    As far as digestion goes, just be sure to really cook your beans and lentils well. I have nasty IBS right now, so I've gone back to meat on occasion just because I can scarcely eat a damn thing right now and I was starting to pass out :S. (I look forward to going back to lentil soup, but that time is not yet)

    Anyhoo, you can make any high fibre meal easier on the stomach by being sure to include lots of SOLUBLE fibre with every intake of insoluble fibre. Soluble fibre sources include white bread (fresh french is best), oatmeal, pasta, potatoes, whit rice, bananas, peeled apples, etc. I always eat a fresh bun before my salad, and I never eat veggies or fruit of any kind on an empty stomach because that leads to bloat. Soluble fibre soothes the gut and helps with the processing of all that tricky, yet healthy, insoluble stuff. Good luck! (I know all that 'white' stuff sounds like the anti-Zone, but it does the trick. I have lost fifteen pounds on this 'diet' of necessity. If you eat these starchy things with veggies, the glycemic spike is largely reduced.)

    I take a sort of "zone-diet" appraoch. I make surte to have a little bit of high-quality protein (eggs, milk, yogurt, nuts, etc.) and a lot of fruits and veggies, with not much grain.

    SOme really easy things to make are:
    • plain yogurt w/berries,
    • baked yams w/cottege cheese or yogurt or melted cheese and a piece of fruit on the side,
    • veggie burger w/siode of steamed veggies & piece of fruit (not all veggie burgers are entirely soy, but you have to be careful.),
    • Sliced apple w/walnuts and cheddar cheese, melted all together in the microwave
    • high-protein breakfast cereal w/ fruit and milk
    • Apple slices dipped in nut butter
    • Salad w/ boiled eggs, nuts, seeds, and/or shredded cheese for portein
    Some non-soy protein sources:
    • Almonds
    • Peanuts
    • barley
    • spinach
    • yogurt
    • milk
    • nut butters (not all of them, so read the lable)
    • sunflowere seed butter
    • cheese
    • whey protein powder
    • vegetarian "jello"
    • high-proten bread
    • high-protein breakfast cereal
    I know ther are more, but I can't think of them now.

    MOst beans are not such a gret source of protein as everyone thinks. Many kinds are more starch (carbs) than portein. Read the lables before you uy them to be sure.

    Stupid question: is there a difference between "vegetarian" and "vegan"? I'm sorry, I know it's a dumb question, but I'm a HUGE fan of red meat (I know it's bad) so I have no clue

    Lots of fruits! Lots of vegetables! And fat (which you do need) from good sources, like poured over your vegetables...Extra Virgin Cold Pressed Olive oil!!!

    Well, I only eat vegen occasionally. This does not work w/my body full time. But, one of my faves is brown rice, which I get fully cooked & frozen from Trader Joe's, which I heat in microwave. Then I cut up tofu & add tamari soy sauce, & some avacadoes, (organic of course). I always drink rice or soy milk. There is Amy's brand, frozen organic (I think Vegan) foods, delicious! She was a mom that wanted healthy foods

    well both eat lots of veggies, fruits, whole grains and beans etc.

    BUT...

    vegans eat no animal products (meat, dairy, poultry, seafood, etc. even honey). whereas a vegetarian will eat some dairy and eggs, but no animal fleash.

    Im sometimes vegetarian. Most of the days of the week I am. I just dont bother with meat it takes too much time. Btw since were on vegetarian recipes..any good ones that have tofu and how to make it taste good?

    Once a week we make nutburgers or beanburgers for the week and fresh bread (Dr. McCay's Miracle Loaf is awesome, google it). You can find burger recipes on allrecipes.com. Otherwise I eat LOTS of fruits and veggies, some nuts and beans, and grains. I ALWAYS eat a little bit of oatmeal for breakfast, and a teaspoon of non processed non refined coconut oil twice a day.

    Hey,

    I've been vegetarian for about 3 years and just recently turned vegan. Here is some stuff I really like that doesn't include soy:

    I'm a HUGE fan of salads usually I keep salad ingredients around at all times, besides the obvious, lettuce, tomatos, carrots; I like to add avocado (one of my all-time favorite foods!), grapes or cut-up apples, you can also add nuts and garbanzo or black beans. If you want to go the vegetarian route you can add feta or boiled eggs. I usually use a vinagerette dressing, or some olive oil and add a little salt and pepper.

    You should also try falafel (cooked garbanzo bean dish). It is really good inside pita bread with lettuce, tomato, tahini sauce, and greek dressing.

    Stuffed portabello mushrooms with spinach (good source of iron that isn't red meat), brown rice, onions, carrots, and season it with different spices.

    I LOVE veggie burgers, so I eat those a lot.

    Eggplant Parmigiana (eggplant fryed in flour and olive oil with cheese, or no cheese for the vegan version and lots of tomato sauce ) is good too.

    Fruit salads are tasty for snacks or breakfast and strawberries with dark chocolate is always delicious for a dessert.

    Also, about a year ago my sister gave me a book called Student's Vegetarian Cookbook: http://www.amazon.com/gp/product/076...83155&v=glance, it isn't just for student's obviously, but it's really good for busy people with not a lot of time to cook and you can veganize a lot of the dishes in there.

    Thanks for the links Pamela and Topaz! I don't plan on COMPLETELY cutting out meat from my diet, but would like to limit it to fish/seafood and chicken.

    Rice protein is your best friend. It's a "complete" protein and is highly bioavailable. As a nice bonus, it has a light flavor so it won't make your smoothie taste like ass.



    (I prefer the vanilla.)

    The easiest way to do tofu (which is a soy porduct, so it won't help madmaxine) is to get the extra-firm kind, drain it and cube it. Brown it in olive oil the same as you would chicken or beef, and make stir-fry of it. Tofu has absolutely no flavor of its own, but will absorb the flavor of anything it is cooked with.

    You can also buy mixes in the health food section of the grocery sotre to make it taste like hamburger or scrambled eggs.

    Thank you to everyone for such wonderful, helpful advice. I used to use soy products all the time, which is how I became allergic- I got sick & I happened to be full of soy milk at the time....
    I forgot all about rice milk- Horchata Rice Milk is the bomb!!!
    OK, I'll update this thread when I am way into my cleaner diet. I bet it'll be interesting.

    Pizzas are easy and quick dinners. Also make great leftovers.

    Most grocery stores carry pizza dough (I always get the herbed whole-wheat) and you can put anything you want on it. Marinated tofu strips, any veggies, cheese or no cheese, whatever!
    I like broccoli, pine nuts, garlic and tofu.

    I'm a vegetarian too, and you guys posted some great tips!

    I stopped eating meat about 5/6 months ago, so I'm still a learner when it comes to proper nutrition, but i'll post some stuff anyways.

    -I love eating garbanzos (chick peas) I always sautee them up with green onions, red peppers, salt & black pepper. It's SO good, and full of protein.

    -I love spinach too...I love to just mix them up with lots of garlic & salt and pepper...it's really good, and healthy. (As long as you don't put too much salt or oil)

    -Bean Sprouts are another favourite of mine...they're crunchy, and they absorb the flavour of anything you put in them.

    It's veryyy important to make sure that you're getting lots of protein in your diet though, because vegetarians/vegans sometimes don't get enough.

    If anyone if interested in cutting out red meat but is still intested in cooking foods that call for ground beef you can always substitute groud turkey. It has a bad reputation for drying out as you cook it but if you add just a little silken tofu it adds some moisture. I usually mix the tofu, turkey, green peppers, a small onion, and some worchrstershire sauce. Pat them into burgers and put them on the grill. YUMMY and about 80% less fat than ground beef.

    I only started eating meat about 2 years ago. Up until then I was a vegetarian. In order to prevent any vitamin or mineral deficiencies you should take a suppliment or add some very protien rich foods. Your body can act pretty weird if you take away the "fuel" it's used to.

    I like Spriutuen. It's made with spirulina algea which is a fad, but it works and it tastes really good.

    YOu can also get ground-beef substitute crumbles, which are jsut textured soy protein. You canuse these for anything that woudl regularly call for ground beef.

    Soybeangirl, did you say that you were raised a vegetarian, then started eating meat as an adult? How did that affect you? I am curious b/c I am raising my son vegetarian, but of course I can't control him once he is out on his own.

    It wasn't actually raised vegetarian but my family didn't eat very much meat at all. It was just a lifestyle choice I made in the 7th grade to completely stop eating meat. When I started to eat meat again it was again, just a lifestyle choice.

    If you are raising your son veg. for moral reasons; animal friendly or the like, then he shouldn't have a problem staying veg but if it just a choice for a healthier body then he will have to be the one to decide when hes older.

    My parents raised me on mostly veg dishes because of the health factor.
