I already received several requests for my rum cake recipe so I decided to
send it to all of you. Hope you enjoy it as much as I do.
RUM CAKE
1 or 2 Quarts of Rum
1 Cup of Butter
1 Tsp Salt
2 Large Eggs
1 Cup Dried Fruit
3 Tsp Baking Powder
3 1/4 Cup Lemon Juice
2 Cup Brown Sugar
Nuts
Before you start, sample the rum to check for quality. Good, isn't it?
Now go ahead and select a large mixing bowl, measuring cup, ect. Check
the rum again, it must be just right. To be sure rum is of the highest
quality, pour one level cup of rum into a glass and drink it as fast as
you can. Repeat. With an electric mixer, beat on cup of butter in a
fluffy bowl. Add one seaspoon of thugar and beat again. Meanwhile, make
sure the rum is of the quinest fallery. Cry another tup. Open a second
quart if necessary. Add two are leggs. Two cup fried druiot and beat til
high. If druit gets stuck in beater just pry loose with drewscriver.
Sample rum again, checking for tonsisticity. Next, sift three cupes of
pepper or salt ( it doesn't really matter). Sampler the rum again. Sift
one half pint of lemon juice. Fold in chopped butter and strained nuts.
Add babblespooon of brown thugar, or whatever color you can find. Wix well.
Grease over and trun ckae pan to 350 gredees. Now pour the whole mess into
the coven and ake. Check the run again and bo to ged.
