    Default Easy lunch choices..

    So i'm going to beauty school starting tommorow, and it's from 9am-3pm. I need some easy bring with me lunch idea's.. i can throw in a lunch bag, and go. As a student, i don't have much cash to get food everyday. Also, i'm really workin on cleaning up my eating, and *trying* to avoid meat. But i do like chicken..<grin>Thanks!

    We are in the same boat! I am going back to school as well, and trying to improve my diet and overall eating habits. Lately, I have been eating a bagel with light cream cheese and a Cambell's tomato "soup at hand" for lunch. I am a carb junkie, so I want to cut down on my carbs.

    Sometimes I also have a yogurt, or some rice cakes. I do like tuna sometimes, on wheat or on top of mixed greens with vinaigrette, but that requires planning ahead, and sometimes I get lazy! LOL

    Do you have a Trader Joes by you? They have several awesome veggie lunch options...

    Spicy Spinach Pita Pizzas - only about 140 calories each, topped with spinach, onions, and olive oil, you can even bring along a little plain yogurt to dip them in

    Low Fat Greek Salad - very tasty, low cal, and easy

    Not sure how much these cost, but at TJs, most things are pretty inexpensive...

    I hate you! My class is from 7am-4:15pm. *stomps feet and pouts*

    I've found a fat free tuna salad kit from Chicken of the Sea, with the premade tuna salad and crackers, it's only 140 calories. Add a Campbell's tomato Soup at Hand for an extra 100 cals, Dannon Lite 'n Fit yogurt at 60 cals and a peice of fruit, you've got all your basic food groups and a satisfied stomach for under 400 calories and zero fat. I do get an hour and fifteen minutes for luch so I'll sometimes run over to Subway and do the Jared thing.

    I snack religiously so I don't get stoopid hungry and make bad choices. Nuts, dried and seasonal fresh fruit, mini bags of fat free popcorn, and Slimfast snack bars are my friends.

    I'll also pack those little packettes of Emergen-C with me. The black cherry is yummy, it's got more than enough vit c to keep those beauty school sniffles away, and it's a great alternative to a Pepsi. No caffine content, unforntunately.

    Pack some fruit and a salad. Load up on the veggies. Protein will sit in your stomache longer, so maybe make a shake for the morning and take one for sometime during your day...

    CHICKEN SALAD. There are so many different ways to make it, and most of them are delicious. My favorite is made with honey-dijon mustard dressing and has grapes, celery, and carrots mixed in with the chicken. I also like it with curry dressing, apples, and grapes. Take your chicken salad in a little tub with some Triscuits on the side (they are whole grain, not flour) and some fruit, and you're in business.

    Remember to bring cheese for snacks. It's good for you, and it's very filling.

    I'm a lunchbox junkie and we're not talking the cute little ones. I have the 12pk cooler one. I keep a couple low sodium V8 juices in them, bottled water, cut up veggies, protein drinks & a sandwich or salad. I pack everytime I leave the house. I'm a little different, I'm pre-comp so I have to eat like 6 times a day!

    When I was nursing I use to pack a chicken or tuna salad sandwich using low-fat mayo with a piece of fruit. Sometimes I would take a lean cuisine or weight watchers dinner.

    Since you are trying to avoid meat, here is a recipe for an eggless eggsalad for a sandwich, serves four:
    1 pound firm tofu (make sure to drain it)
    1 tbsp each onion, sweet pickle relishm white vinegar, mustard and sugar
    2 tbsp each minced celery and mayo
    1 /4 tsp dried dill
    1/2 tsp ground tumeric
    salt and pepper to taste

    Combine the mayo, picle relish, vinegar, mustard sugar turmeric dill. mix and set aside
    Place tofu in large bowl and crumble it stir in onion and celery. mix in mayo mix. chill for about 2 hours to let the flavors mix and blend.
    each serving is appx 230 caloried depending on the mayo and type of tofu you use. You can get some tofu at 130 cal. per serving and some for as low as 80 cal. per serving.

    I've got a microwave at work, so I usually cook something kinda big on Sunday and eat off of the leftovers for the rest of the week. If you'd like, I can post or send recipes for:
    -cheap 'n' easy green curry
    -veggie-bean chili (vegetarian, whole protein, low-fat, lots of good stuff)
    -easy burritos (cheap, whole protein, fast)
    -tuna-rice salad (best in summer)

    Cook a ton of stuff on sunday evening or whenever you are free, and store it in tupperware in your fridge.

    Chicken salads, brown rice, and other things you can take out and easily eat (and won't spoil too fast). Great foods on the go that are a lot more nutritious than yogurt or anything like that.

    It doesnt take to long and its easy to eat on the run, between classes or whatever.
